If you are looking for an instructor in Dahab, I highly recommend @freediveandthrive. After a pause of about half a year, I regained confidence in freediving, and I am so happy about that!
Also, Osama and I talk about some cultural things in Egypt while driving down Peace Road, which is the main road through Dahab. He taught me a lot during my stay and gave me many tips for my first trip to an Arabic country.
The breakfast at Bayside Eatery is really good. Make sure to get the oat pancakes; they are an 11/10. It is a nice little coffee shop in front of the beach where you can hang out with friends or even work on your computer.
