I'm a train spotter from Australia and I've been in Sweden for nearly 3 weeks now for family stuff and I've been researching a bit about Swedish trains and the closest station to me is Osby station, I also did a 1 hour train spotting session at Osby station on Thursday July 4th

I saw lots of trains at Osby from X2000s, GreenCargo and Snälltåget train passing, I also went to Ørestad station for an hour on July 10th before heading to the airport back to Australia the same day

Do the X2000 high-speed trains, articulated EMUs, and electric locomotives operating services to Denmark and Germany from Sweden have more than two pantographs due to the different voltage systems used in Sweden, Denmark, and Germany?

The X2000 trains don't have services all the way to Germany actually. But the reason for having two is only in case that one of the two doesn't work! They have electronics in the engine to convert the electricity!
Is there a freight train from Narvik, Norway to Oslo, Norway carrying seafood that passes through Sweden?

Yes, there are! They are seen in other videos from us in trains from Cargo Net, and with Green Cargo Re in this video
