This is just the beginning, the coastal food changes so much. And while it’s neighbouring with Ecuador you can see the two cultures are so different with just the way they take the same ingredients but prepare them differently.
My wife and I are traveling to Santa Marta in February. Can't wait to try some of these dishes! You really make them look delicious.

Rice Masato is very easy to prepare. Cook for about 20 minutes a cup of rice in 3 cups of hot water with white sugar and cinnamon. When it is cold, blend it and add the pineapple peel to ferment. Then serve cold and with ground cinnamon. In Colombia it is usually accompanied with a sponge cake called "mantecada".

Ayngelina, if you have the opportunity to visit the departments of Boyaca and Santander I recommend you to explore their gastronomy which in my opinion is unique. In Boyaca there is a dish called "cocido boyacense" and in Santander "pepitoria" and "chanfaina". They are very interesting dishes made with local ingredients that are probably not well known but are surprising.
