Totalement Toqués - Season 2: Hakuna Matata Restaurant-style Chakalaka

Get ready for a culinary journey to the African continent! Sous chef Karim Rimi takes you to the land of the Lion King with his recipe for Chakalaka, a signature dish offered at Hakuna Matata Restaurant.
With over twenty years' experience in the restaurant business, Karim shares his know-how and a few tips on how to cook this traditional dish.
The ingredients
For the main dish
1 red bell pepper
1 green bell pepper
1 onion
50 g of ginger
3 cloves of garlic
6 tomatoes
50 g of tomato puree
200 g of canned white beans
200 g of canned chickpeas
2 teaspoons of chili powder
5 cl of olive oil
500 ml of water
Salt
For the sides
300 g of broken rice
Fresh coriander
The recipe
• Wash all of the vegetables and pulses, finely dice the tomatoes, bell peppers and
onions, chop the ginger and crush the garlic.
• In a pan containing hot oil, fry the bell peppers and onions for 5 minutes, then add
the garlic, the ginger, the tomato puree, the fresh tomatoes and cook for 10 minutes.
• Add the chickpeas, the white beans and one liter of water. Season with salt and
pepper and simmer for 20 min over medium heat.
• This dish can be served hot or cold with rice !
