The chaos god factions should have the option to establish a cult after defeating a settlement like how the skaven are able to make under cities Or when you trade a settlement to another faction it automatically comes with a cult

Chaos corruption should be much easier to spread and more powerful seeing how important it is in the lore

The cults i would change by theme. Lots of deaths increases chance of Nurgle or Khorne. Diplomacy increasing chances of Tzentch and Slaneesh. But it would be a relatively low chance either way.

Perhaps high level Daemon settlements should spread their corruption across region borders so that you can spawn cults in neighboring enemy and neutral settlements, thus weakening them for future attacks.

High level corruption buildings do affect nearby provinces. Plagues also increase nurgle corruption and high level lords can cause a provence to reach 100 corruption in just a few turns as they attack it.

Im concerned about just how simple this campaign has been so far.....

I enjoy your content. You really seem to dislike nurgle or at least that’s the vibe I get. Hopefully your next campaign you enjoy a bit more.

It would perhaps have been a little more ideal to transfer units to the other army rather than disbanding them.

Lorewise it would probably not be there, but I think Warriors of Chaos should be all-Werewolf faction. Like we got vampire faction, sea-vampire faction, mummy faction why not have a werewolf faction. I mean this would be such an awesome army roster if you think about it, on activating a skill or perhaps like tomb-kings if your army looses some troops your human troops transform into wereworlf troops. It could make a really good multiplayer army, deceptive units that you can choose; cheap but only human or expensive but werewolf-cursed, yet both indistinguishable in the field.

Thing is, Skinwolves are a Norsca thing, not a Warriors of Chaos thing. So while a Skinwolf Legendary Lord is possible, it would be Norscan and then only themed towards buffing them instead of having a full Skinwolf faction.
