Personally, the notions of initial and final topology helped me a lot to understand the topologies constructed from existing ones.

Very good. This is a general feature of universal constructions. For instance, if you want a universal object U with two projections U -> A and U -> B, one can form a new category of all objects T that have projections to A and B, and define a map between two such objects S,T to be a map S -> T that commutes with the projections (if you draw a diagram you will see that there are two triangles that need to commute). Then the final object (i.e the object U such that for any other object T, there is a unique map T -> U) in that category is the product. More generally, one can form a new category of objects that have a desired property. Then the universal object with that property is either the initial or final object in this new category.
