I will tell you the secret. Puy buys fresh pandan, Pandanus amaryllifolius, in the market every night. She blends the pandan with water and strains out the extract. She then uses the extract to make a green dough. Many people associate the flavor of pandan with vanilla, coconut, rose, and almond. The smell is awesome. I cannot be sure but I think Puy learned the pandan extract technique from her father.
