Three Must Try Summer Rum Drinks

These three rum cocktails are some of my favorite to enjoy on a nice summer day. They explore the complexity of aged rum and make for a nicely balanced summer cocktail. The Painkiller is a creamy and smooth tiki style cocktail that will go down a little too easy. The aged rum daiquiri is very simple to make but sometimes the most simple forms of drinks are the best. The caipirinha has been my favorite replacement to a margarita and a mojito for awhile now. I believe this should be more popular in the US and hope it will be in the future.
Aged Honey daiquiri
2 oz of aged rum
1/2 oz lime juice
1/2 oz 3to1 honey syrup
shake with ice, strain into Nick and Nora,
Garnish with lime wheel and piece of honey comb
Caipirinha
2 oz of Cachaca
1 lime
2 bar spoons of super fine sugar
cut some but not all of the peel off of the lime, take out pith, cut into eighths, muddle with super fine sugar, add cachaca, shake with crushed ice free pour into glass add crushed ice if needed!
Painkiller
2 oz of aged rum
2 oz of pineapple juice
1 oz of orange juice
1 oz of creme of coconut
shake with ice and pour into glass, add extra crushed ice if needed, grate fresh nutmeg overtop,
garnish with pineapple fronds

    Hi Lucas, I like all of these! However I use Appleton 8 in the Painkiller and in my Daiquiris. I have a different Cachaca for my Caiperinho. Nick from York

    Hi Lucas, I have my second bottle of “51” Cachaca. In between I had a much better one, a 500ml bottle of Magnifica de Faria, Bica Do Alambique, bottled at 48% ABV Nick from York
