This will be your favourite chicken Marsala Recipe (with wild mushrooms)
Chicken Marsala is made using a fortified wine that originated in Sicily, like Sherry or Madeira. This version has a cream sauce and reduced with dried wild forest mushrooms. The flour coated chicken breast is sautéed in butter and olive oil with fresh thyme, rosemary, mushrooms, shallots, garlic, chicken stock, Marsala and cream. The chicken is rested in a warm place and this helps in keeping the breasts juicy, it is then reheated just before serving. You can use your favourite dry mushrooms, but it's the mixture of fresh and dried that bring this recipe up a level. I used a mixture of dried wild forest mushrooms consisting of oyster, black fungus and boletes mushrooms. Other alternatives you could use are Porcini, chanterelle and morel. For the fresh I used Swiss browns also known as Cremini (Agaricus bisporus).
It’s all made using one pan and quick to make for a restaurant style dish that will impress any foodie. Enjoy Creamy Chicken Marsala!

I've done this twice and it's hands down the best recipe I've ever used. The first time, we used about two handfuls of chanterelles that grow abundantly on our property after a good rainfall from May thru July (pretty sure that sounds weird to a denizen of the southern hemisphere). We also used a decent Marsala; even pretty good ones are relatively inexpensive. Tonight we had to use some baby bellas that were post prime but it was still really, really good. I think a great stock is the most important thing.
I cook Chicken Marsala pretty frequently during the cool months of the year, so I thought I'd perfected the recipe -- until I tried this! The addition of the dried mushrooms to the chicken stock makes a *HUGE* difference. So this is my favorite now 💕 As usual, great job Chef!

My Children Marsala Recipe is almost identical to yours but I never thought about adding Rosemary. I’ll definitely have to start! I like to add Mascarpone instead of Heavy Cream. I’ll also use Crème Fraîche or even Sour Cream a pinch. Thanks again for another wonderful recipe Chef Joel! 👍🏼👏🏼👏🏼👏🏼👏🏼

Joel my friend, great recipe, don't change a thing, btw, here in rural Kentucky we can find morel mushrooms if you look in the right areas, some folks have what they call their " honey hole" as there will always be some there. Cheers mate.

Here in oz there are many people in hospital with liver damage due to beautiful looking mushrooms sprouting everywhere this autumn season. I've been mushroom picking here and in France, love the secret spots that no one reveals, more precious than gold! But always be sure! Cheers Steve.
