If you bake on a higher temperature, reduce baking time. *Place an oven safe baking tray on the base of your oven and heat your oven at the highest bake temperature for at least 1 hour before baking. Mine went up to 495 degrees f and I let it heat up for 2 hours before baking my pide. *use a thin cutting board wrapped in aluminum foil dusted with corn meal to help transfer your pide from the countertop to the oven. Another option would be to build your pide over a sheet of parchment paper and transfer the pide to the oven with the parchment paper (though this may result in less browning on the bottom crust)

    This looks amazing, but I don't really like to try to guess the quantities of things based on a 60 second video constantly jump-cutting. "Piping hot oven" for 8-12 minutes? Is that 450? 350? 500? How much yeast?

    A few years ago I was in Turkey and I had dinner around 11 pm or 12 am and it was one of the best foods I ever had. I think it was Iskender kebab bites. Every time something about Turkey comes up I always talk about it. Great country and people too 👌👌

    Same for me. I was once in Turkey for three days and afterwards I had gained 4 pounds. I had the opportunity to see some European countries and visit a lot of good restaurants, but food in Turkey was the best. The second best food in Bavaria. But I have never been in Asia - I consider Turkey as Europe

    It's really tasty, there are different kinds of pides. The city that I live in (Kastamonu/Black sea region) has Kır pidesi. It is a different version of pide and I had it like a tomorrow I guess. It is pretty good.

    This looks amazing, just a professional tip, don’t mix salt with your yeast, salt actually doesn’t help yeast grow. Next time just add sugar to the water with the yeast and keep the salt with the rest of the dry ingredients.

    Good to know, I'm so definitely making this for me and my daughter (she has 4 of her teeths now so she can smash and dummy these, at least she can chew the cheeses and sauce on her little taste buds). Thanks for your professional tip: but I don't think she wanted the dough to RISE though, lol, hence why she pinrolled her pieces into flats. I believe she was aiming for a flat crust turk pizza

    The words pizza and pide come from the same Farsi word "pita", meaning flatbread. Probably both pide and pizza where both invented in the same period. They are really similar. However italians did a way better marketing of their version. Also mass migration of italians to the states helped making pizza popular in the world. Similar to pizza you can have pide with different toppings. Unlike pizza you can have pide in different shapes, boat shaped, oval, round, calzone-ish etc. I enjoy having both pide and pizza. They are both delicious.

    I used to work at a pizzeria run by a turkish couple and the husband would makeshift these for me with the pizza ingredients! It was sosososo good and he only called it a "bateau" (boat). Thank you so much for sharing this i will 100% make it, gonna bring back memories.

    Made a different version of these 4 nights ago! Google is definitely telling KZread what I've been up to, showin me this so soon 🙄.... but for real, these things are better than pizza! We made vegetarian ones with eggplant, tomatoes, fresh mint, garlic, feta cheese. It's a modified ATK recipe. Phenomenal!

    You can also add an egg on top of the ground beef one, I recommend it. Mix the egg before you dump it on though, then bake it normally. You can also add cheese. My favourite pide is definitely mushrooms and cheese pide. I also recommend trying that if you like mushrooms.

    You can also crack an egg inside too on top of the meat and it doesnt have to be seeded. (I honestly prefer mine that way). Also butter the sides after baked

    As a Turk, i LOVE pizza, but pide is just… at another level. Just like pizza, pide can have a lot of different styles. Most common one is called “kuşkaş” (short for “kuşbaşılı kaşarlı”) which is made with kashar cheese (which is a Turkish cheese type, we call it “kaşar” here) and meat that has been cut into tiny dices

    There's a Ukrainian/Georgian version we've been enjoying where the dough is a bit thicker, so it becomes more bread like. An egg gets cracked on top a couple of minutes before you finish baking to leave a runny yolk, which you then stir into the cheese with some butter when it's served.
