    Dude there is only one hanger steak per steer not two. It’s called a hanger steak because it hangs between the two tenderloins down by the diaphragm. Yes it is delicious! Arguably the best cut on the entire carcass. Every other muscle on the steer except for the heart comes in pairs two each. You forgot to discuss the vein or nerve that runs down the center in between the two lobes. A niece chimichuri sauce goes really nice with a good hanging tender. The French refer to it a onglet’.

    You're absolutely right, but it looks like he cut it into two separate cuts of meat, most people do that with a hanger steak, I know I do.

    @@themrmaiorca absolutely got to take that vein out. For the avg. Joe he should have shown or mentioned it or some one out there will end up getting one with the vein in start gnawing on it like Snoopy with a new chew and asking them self what's he talking about? And by the way would not recommend eating that stuff raw it has tremendously high bacteria counts simply because of its natural location in the animal.

    Sure it's great. It's also 40%-70% more expensive than ribeye. What's with this talk about being "cheap?" Everyone who knows ANYTHING about beef knows that hangar steak is one of the most expensive cuts on the cow. I can buy all the choice ribeye I want today for no more than $15/lb. Hangar is running $20/lb. So it SHOULD be better. Good grief.

    I've been hearing about hanger steaks for a while but didn't know what they were or how to prepare them. I see you slice them into steaks like filet mignon from a tenderloin. That I can do. I like your prep of bacon wrapping and using the onion, garlic, chipotle & adobo sauce/oil for cooking and flavoring. And the rucola & basil sauce gives good balance to the flavors. I'm heading to my favorite butcher's tomorrow morning for my new weekend challenge.

    Talk to your local butcher shop. Get to know them. There's one near my work, and after going there and buying all the different kind of steaks they had, THEY told me about the hangar steak and they offered to keep it for me next time they had one. It's not as advantegeous but get to know the butcher at your supermarmet too. I talked to mine and I managed to buy whole sous-vide pork belly for my chashu.

    A good way to check the meat flavour quality. Is it a delicate flavour, or more robust. Gives an indication of how much of what seasoning you might want to add. Most serous home sausage makers will taste their ground mix before running it into skins or making burger patties. 1st time I tried, was when I was about 6 or 7. dad was breaking down a side of beef and slicing steak. Handed me a small slice . I was a bit hesitant at 1st, but after a couple seconds chewing, I asked him why cook it lol.

    yes used to be very affordable 10 years ago. I believe Anthony Bourdain made them very popular by putting them on the menu at Les Halles' back in the day.

    Moin. In Germany it´s called "Nierenzapfen" witch is directly tranlate in to "kidney cones" I am not shure but a friend of me has told me that it is just for minced meat or saussage, because nobody buy it here.

    New steak? The Hanger Steak tenderloin was on my menu at my restaurant back in 2010! Trimming leave to utilize for different dishes. This meat is wonderful from the tie bits used for tacos to medallions for a grilled steak sand w/ mush peps & cheese. Get crazy & add an egg. Huge filets tenderloin for main coarse with grilled asparagus & loaded baked potatoes. Trimming is the secret

    I'm still hunting for the wood in the forest, as I have to have that before cooking the meat... Wait, what? Now I have to have a certain cut of meat after a month of getting the wood and cuttin it up to put on the fire? I don't get it.     Anyone know what this cut is called in German? I'm living in Germany right now. I asked Google Translate and they translate it to the equivalent of "Coat-hanger Steak" and, of course, that's pure nonsense. But it gets worse, another well know dictionary service (which I'm not allowed to mention here) translates it to the German equivalent of "the steak of the man who hangs people". I am not kidding!

    You don't want to cook it all the way up to the temperature you do a Ribeye ? LOL HUH.? What in the world temperature do you cook a Ribeye to. Im guessing that since you didn't show the cut side of it ...it was way over cooked because Chefs love to show off a Perfectly Cooked steak every single time ...
