I watched another video that explained that being a picky eater is a defense mechanism of 1-year-olds when babies start eating solid food - being that 1-year-olds don't know yet what is edible and what is inedible/poisonous. People who remain picky eaters are people who didn't develop past this baby-level defense mechanism when it's no longer necessary - e.g. can communicate with others to figure what is edible.
