Chicken Karahi Recipe (No Tomatoes)
Ingredients:
1 Kg chicken, cut into pieces
2 large onions, finely sliced
2 tablespoons ginger-garlic paste
3 tablespoons vegetable oil or ghee
1 cup double cream
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1 teaspoon black pepper
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Green chilies, slit (optional, for garnish)
Instructions:
Preparation:
Begin by preparing all your ingredients. Finely slice the onions and prepare the ginger-garlic paste if not using store-bought.
Sauté Onions:
Heat the oil or ghee in a large karahi or wok over medium heat.
Add the cumin seeds and let them splutter for a few seconds.
Add the sliced onions and sauté until they turn golden brown. This may take about 8-10 minutes.
Add Ginger-Garlic Paste:
Add the ginger-garlic paste to the onions and sauté for another 2-3 minutes until the raw smell disappears.
Cook Chicken:
Add the chicken pieces to the karahi. Stir well to coat the chicken with the onion mixture.
Cook the chicken until it turns white and starts to brown slightly.
Add Spices:
Lower the heat to medium-low. Add the coriander powder, turmeric powder, red chili powder, black pepper, and salt. Mix well to ensure the chicken is fully coated with the spices.
Simmer:
Cover the karahi with a lid and let the chicken cook in its own juices for about 15-20 minutes. Stir occasionally to prevent sticking. If the mixture becomes too dry, add a splash of water.
Add Double Cream:
Once the chicken is cooked through and tender, lower the heat and add the double cream. Stir gently to mix the cream with the chicken and spices. Let it simmer for another 5-7 minutes until the gravy thickens to your desired consistency.
Final Touches:
Sprinkle the garam masala over the chicken and mix well.
Garnish with freshly chopped coriander leaves and slit green chilies if desired.
Serve:
Serve the Chicken Karahi hot with naan, roti, or steamed rice.
Tips:
Adjust the amount of red chili powder according to your spice preference.
For a richer flavor, you can add a tablespoon of butter along with the cream.
Always use fresh cream to avoid a sour taste.
