In my opinion, hiking in Tiger Leaping Gorge still remain its charm as the trek route in the mountains (for hikers, not the mass tourists) is still the same as before, so as the challenges and scenery. The infrastructure like roads, bridges and tunnels you saw on your way are for a better development of the whole area and benefit the local people, not just for tourism (of course, tourism also contributes to local development and creates jobs). In mountainous and remote area like this, it’s difficult to live and develop, which causes poverty. Those roads and bridges make it possible for people and goods coming in and out much easier, faster and safer, which is an important part of poverty lifting.
There is a saying , every warning sign had a story 😂

Really really amazing mountian roads.. it has later turned much worse though.. But most of the Tibetan mountain roads are really really great
