Good feed there Dom. If you treat any of those small tuna with care and respect, you will be surprised by the quality of the meal that they can provide. Brain spike- bleed and chill on ice. The best Katsuo (Bonito) Tataki is made by searing the loins, skin on in a fire made of rice straw and then dunking in ice. Traditionally served not with wasabi but grated ginger and garlic. The sauce is Ponzu. If you can’t get it, mix some lemon and lime juice with Japanese soy sauce like Kikoman. Bon appetite or Itadakimasu!

Great video! My best friend's mate who was a sailor used to catch the tropical style tuna like big eye etc in Darwin. He'd do a mix of raw and black sesame coating with simple s&p, onion and garlic powder. Then sear the decent sized oblong chunks on the BBQ and leave it rare in the middle. It was served up sliced with wasabi, soy sauce, chilli soy sauce (with chopped up birds eye chillis in there), ponzu, chilli crunchy oil and whatever else anyone wanted. Best feed ever!!!😃

I cook tuna the same way but just a tip use normal oil to cook the tuna and then drizzle sesimi oil over the top just before you take it out because cooking in it can be over powering and it's a low temperature oil it can give off some unpleasant flavours
