well, it's not because of purity, it's because there is constant flow, ice cubes from the fridge get a hard shell and pressure builds inside, the white of ice you see is actually oxygen pockets refracting. if instead it froze in layers like this the impurities would be about as visible as in a glass of water. that's how home bartenders do clear ice, directional freezing. in industrial clear icemaking they use special freezers that keeps the water moving.
