Nice! I ha e recently discovered plastic mason jar lids. They don’t corrode and they are easy to clean. Not good for actually canning but for applications like this they are perfect.

I love canning out of my garden. I just made two and a half cases of pickles. Bread and butter s well as garlic dill. It’s great everything incoming garlic and dill pickles. Butternut squash into soup with my bone broth. Acorn squash, zucchini collards. They chicken stuffed with collards, garlic and onion. Yum

I want all of the stuff to be totally submerged under the liquid. I don’t want to buy actual weights and an onion has layers so you can use a cross section to accurately fit the diameter of the jar and hold everything without spending money! And since they aren’t going on the shelf, I don’t mind an organic weight because (in my experience) it doesn’t rot

I don't have the growing carrots but my purple asparagus are just doing so great and purple onions are extremely over doing it I never just done onions I always put them in with pickles and red hot peppers . But we're going to try this I've been dehydrating like crazy to get Jared tell families need to fill jars up with food dehydrated. I do it for there birthday with love.

In the fridge they will last a really, really long time, pretty much longer than it will take you to eat all of them. Not shelf stable though so don’t try to leave in the cabinet

These are fridge only and will last very long in your fridge but you would need to pressure can them or hot water bath can to make them shelf stable. if you need a guide on that i can help as well just let me know!

I did this and it was way too much salt. Id use half that amount of salt and sugar. Alot of recipies call for like a big pinch a a tsp of salt per cup, not a full tbsp per cup of brine.

For my purposes, soap and hot water is fine. This isn’t canned, so “clean” is good enough. For preserving or fermenting, I like to use a Star San cleaner just so I know things are very clean. Boiling them is also fine!

I just made pickled onions tonight but I used another recipe. Your garlic, mustard seed, peppercorn and bay leaf sound great for next time. They need to be used in a couple weeks though, maybe more if stored upside-down.

@TheAlrightChef I did an Egyptian bay leaf in mine but that's not the flavor I'm going for. I added more rice vinegar, sugar and mixed peppercorns. I didn't use peppercorns initially. I'm going to order mustard seed and more mixed peppercorns. I might try star anise but I don't want a licorice flavor to dominate. Any suggestions to bring out sweetness and/or interesting flavor notes?

I usually add it in hot, put the lids on, and then flip the jars over and leave them upside down to cool. The heat from the liquid seals the jars and creates a little vacuum seal so they stay fresh in the fridge for a super long time

@@peaceONearth365 totally get that!!! So fermenting would be different. Fermenting is letting things sit out and allowing natural yeasts that exist on the vegetables skin to create its own natural vinegars. This is just regular pickling where you are using your own vinegar to create a brine to preserve the veggies and give them flavor. They last a really, really long time in the fridge but I like to say consume within a month or two for best flavor. Without getting to much into it, shelf stable pickling requires a higher concentration of vinegar acidity (5%) and you have to seal the jars using a boiling water bath or pressure cooker to kill bacteria/seal the jar. Hope that helps!

They are really good by themselves, I’ll put them out with a charcuterie board for some sweet and sour crunch. They are really good on sandwiches, as a topping for salads, The sky is the limit! They are great on gyros too with some tzatziki 😮💨😮💨

The way that this is made is not suitable for shelf storage, hot weather is probably worse. You would need to boost the acidity to at least 5% and then use an actual canning method to seal the jars to make them shelf stable

You only have to can them if you plan on keeping them out of the fridge on the shelf:) otherwise, just toss them in the fridge. They will last a really, really long time sealed/refrigerated

Nice! I ha e recently discovered plastic mason jar lids. They don’t corrode and they are easy to clean. Not good for actually canning but for applications like this they are perfect.

I love canning out of my garden. I just made two and a half cases of pickles. Bread and butter s well as garlic dill. It’s great everything incoming garlic and dill pickles. Butternut squash into soup with my bone broth. Acorn squash, zucchini collards. They chicken stuffed with collards, garlic and onion. Yum

Thank you for the kind words, much appreciated :) and also great question, this recipe is meant to be refrigerated only and is not safe for long term storage. You would need to waterbath the jars and pressure can them in order for them to be safe for shelf storage

I want all of the stuff to be totally submerged under the liquid. I don’t want to buy actual weights and an onion has layers so you can use a cross section to accurately fit the diameter of the jar and hold everything without spending money! And since they aren’t going on the shelf, I don’t mind an organic weight because (in my experience) it doesn’t rot
I don't have the growing carrots but my purple asparagus are just doing so great and purple onions are extremely over doing it I never just done onions I always put them in with pickles and red hot peppers . But we're going to try this I've been dehydrating like crazy to get Jared tell families need to fill jars up with food dehydrated. I do it for there birthday with love.

These are fridge only and will last very long in your fridge but you would need to pressure can them or hot water bath can to make them shelf stable. if you need a guide on that i can help as well just let me know!

I did this and it was way too much salt. Id use half that amount of salt and sugar. Alot of recipies call for like a big pinch a a tsp of salt per cup, not a full tbsp per cup of brine.
I'm new to preserving/pickling. When you say "cleaned jars" are talking soap&water, bleach, boiling them?

For my purposes, soap and hot water is fine. This isn’t canned, so “clean” is good enough. For preserving or fermenting, I like to use a Star San cleaner just so I know things are very clean. Boiling them is also fine!

That’s an excellent question that I don’t really have an answer for. I suppose you could use something like lemon juice diluted into water, but that wouldn’t taste the same. Sorry I don’t have a better answer for you :/

I just made pickled onions tonight but I used another recipe. Your garlic, mustard seed, peppercorn and bay leaf sound great for next time. They need to be used in a couple weeks though, maybe more if stored upside-down.

Yeah I usually say 2 months for best flavor. They will last a lot longer than a few weeks but after a while the flavor starts to change a bit

@TheAlrightChef I did an Egyptian bay leaf in mine but that's not the flavor I'm going for. I added more rice vinegar, sugar and mixed peppercorns. I didn't use peppercorns initially. I'm going to order mustard seed and more mixed peppercorns. I might try star anise but I don't want a licorice flavor to dominate. Any suggestions to bring out sweetness and/or interesting flavor notes?

I usually add it in hot, put the lids on, and then flip the jars over and leave them upside down to cool. The heat from the liquid seals the jars and creates a little vacuum seal so they stay fresh in the fridge for a super long time

@@peaceONearth365 totally get that!!! So fermenting would be different. Fermenting is letting things sit out and allowing natural yeasts that exist on the vegetables skin to create its own natural vinegars. This is just regular pickling where you are using your own vinegar to create a brine to preserve the veggies and give them flavor. They last a really, really long time in the fridge but I like to say consume within a month or two for best flavor. Without getting to much into it, shelf stable pickling requires a higher concentration of vinegar acidity (5%) and you have to seal the jars using a boiling water bath or pressure cooker to kill bacteria/seal the jar. Hope that helps!

They are really good by themselves, I’ll put them out with a charcuterie board for some sweet and sour crunch. They are really good on sandwiches, as a topping for salads, The sky is the limit! They are great on gyros too with some tzatziki 😮💨😮💨

@@1ntuthukozwane water bath canning is when you put the jars into water and boil them. It seals the jars, kills bacteria, and removes the air so you can put them on the shelf and long term store them. If you don’t do that, you have to store them in the fridge so they don’t get moldy

The way that this is made is not suitable for shelf storage, hot weather is probably worse. You would need to boost the acidity to at least 5% and then use an actual canning method to seal the jars to make them shelf stable
