Winter melons are a type of squash so they're different from the sweet melons in the West eg water melons, cantaloupe etc. Traditionally it is used in soups and candied (can be added to rice dumplings with meat) but the Taiwanese has incorporated it in their milk tea due to it's mild flavour.

Winter melon tea and Winter melon pastries are made for each other. Beautifully done! Candied, it goes well with ice desserts or savoury, sweet rice dumplings. The Taiwanese've added Winter melon in their Milk tea. Melon melon is very expansive here so an alternative has to be used if I wish to make Milk tea.
