Get My Cookbook @ www.WestIndianFoodCompany.com Learn how to make a comforting pot of Caribbean Corn Soup, with simple step by step instructions from Chris De La Rosa of CaribbeanPot.com Unlike the vegan version of Corn Soup I shared with you a few years back, this version contains salted pigtails for additional flavor.
For this Corn Soup you'll need...
1.5 - 2 lbs salted pigtails
1 1/4 cups yellow split peas
5 cups water (adjust as necessary)
4 cloves garlic
2 tablespoon coconut oil
6 sprigs thyme
1 large onion
2 stalks celery
1/4 cup parsely (chopped)
1/4 teaspoon black pepper
3 scallions
3 pimento peppers (aka seasoning peppers)
2 bird's eye peppers (any spicy pepper you like)
3 tablespoon shado beni (culantro)
2 cups diced pumpkin
2 cups diced sweet potato
2-3 cups chicken stock
1 1/2 cups coconut milk
2 carrots
4-6 corn
1 can creamed corn
1 cup frozen corn (optional)
1 cup allpurpose flour
pinch salt
1/4 cup water

What a delicious pot of corn soup. Great work Chris.
Love it!
Thank you brother , its one of the best tasting soups ever and the first time I had about 90 % of the ingredients , 2nd time just corn , coconut shreds and Korean sweet potatoes , garlic and threw in some turmeric . I like it spicy and hot , so added pepper flakes , but its the corn and coconut that goes together like nothing else
Absolutely mouth watering 👍 thanks for sharing!
Chris I will be eating that soup over and over if I was there! This is amazing and looks delicious. I will be trying this one!

I'm glad what you said about packet soup. Old school don't use any of those dried ingredient. Chris I use a bit if fine cornmeal in my dumplings that's how my Grandaunt taught me. It's delicious. I'm gonna fly from the UK and help you drunk that soup. Noting naaah waste, noting nasah dash whey lol🤣😂

I freeze leftover soup in individual serving size pyrex glass bowls. Then when you need a lunch, you are ready to heat and go

I used too.. but I didn't like the texture of the dumplings and ground provisions when thawed. Great Idea though

That was my plan. I used to do this with other soups when I used to watch my grandkids. I would heat it up in one of those microwaveable plastic cup/bowls from Target or Walmart ($1-$2) while I would make their food (so I wouldn’t eat the same food they were eating). Trying to lose weight and eating with kids is very hard.
Looks so good!!
will def try this !
looks so good...
Another great recipe.. Thanks for sharing. :")

Best cook so far. Good Job Boy!!
I tried it and it was best . Thanks for ur recipe
Made this pot today, it came out sooo good! I’ve never had this before but boy was it tasty! I did leave out the pig tails. I’ve never tried it before so I idk if it came out right but the flavors were so good almost finished the whole large pot between my husband, parents, kids and myself. Not much left overs to reheat 😆

pig tail, ox tail etc they add lovely flavors. they are however super disgusting and bad for your body. always nice to skip
So perfect because I was thinking about making a soup today for dinner! I'll be using chicken because I can't digest pork will and of course adding my own twist! Thanks for the recipes!

Hi Chris! When you add the split peas and pig tails, do you drain the water it boiled in or do you add that to the soup too? Planning on making this today!! Looks AMAZING!

Chris quick question. Do you bring anything back from the Caribbean when you go? Maybe you could do a video so we can see what if anything you return home with from your travels to the Caribbean.

I'm fortunate in Ontario.. we can get just about everything here in Asian, west Indian and many general supermarkets. Something even better quality than what I see in the Caribbean. That said.. I'll keep what you said in mind for my next trip
Can u substitute "cow foot" for the pig tail" ? Good looking soup, Mon! Got my bowl, spoon n punch, waiting;)))
Hi. I love the video and went to get all my ingredients but can I use fresh pigtail instead of salted?
Look at that! You outdid yourself with that soup😊 Can we use smoked ham hocks?

Hey Chris, I can't wait to make corn soup; been craving it for awhile. Unfortunately, I can't find pigtail here.. So, I was going to use salt beef instead?😊👌 What are your thoughts?

Hey Vicki, ya make de soup as yet? I have to use salted meat too as the hubby doesn't eat pork... Doesn't quite lash like the pigtails would but it is ok. Add lots of pimietoes!
Did I put the water from the pigtail in the soup? Or should I strain it?
I'll help with the pot

Hey Chris do you guys have a special dish for New Years? We have soup joumou
@greenpenncil
6 жыл бұрын
Fabiola Antoine Hi. Don't know if this came from the Africans but, for early New Years morning ( like after 12:00am) most Trini's I know make a pot of black eyed peas & rice, with or w/o meat. It's always great while it's still hot. Said to bring good luck for the coming year. When I was a girl we used our fingers to eat it. Strange eh, make African food and eat it like East indians. That's T&T for you. (Maybe someone can confirm whether the African ancestry is correct or not.
This looks delicious, but where do you find salted pigtails? Are they available at most Hispanic or international markets?
Did you boil the fresh corn before adding it or it boil in the soup
I wonder who is the people that giving the thumbs down bouy? I wonder if they get horn by the corn soup? This man is the ultimate best.
I tried this soup only difference is that I left some ground food chunky in it. It was Yummy
I would love to make this but I don't eat pork so what other salted meat would you recommend ???? Thanks in advance 🙏🏾
Hi Chris that soup looks so good. What other meat can i use in the soup, No red meat or pork for me .Thanks! XXOO
