    The problem with Suya in West Africa is that it is usually extremely tough. On my trip to Abuja , Nigeria I found the best Suya spot (the Abuja International Airport) where the meat melts in your mouth. It was so good, I bought his entire stock and kept it in the fridge.

    In the Hausa language, we call it Balango! Most Hausa speaking West Africans integrate easily within the Zongo communities in Ghana because we share similar culture in terms of food, religion, language and way of dressing. Zongo community is known as the community of immigrants. I wish I was there to help you with the translation. Greetings from USA

    I have tried making suya here,but the flavor is not the same when you do it in an oven.I believe the smoky fire gives it more flavor.

    The meat is called Balango and the powder is called Yaaji in Zongos..Next time let me come and translate from Hausa to English or Twi lol, with that Haruna can explain things better, even though just like English the Nigerian Hausa sounds different to the one we speak in Ghana but we all understand whatever. Nice 👍🏿

    I have tried this meat before and the powdered pepper was too much for me. I must say it was full of flavour. I'm not African but I do like to try some of the dishes.

    In the U.S. beef leg is the cheapest most undesirable cut of beef because of its toughness. The most tender cuts come from the back, along the spine of the cow.
