Sisig AFAIK of its origins has somewhat paralleled to the origins of Buffalo Wings. They both created because most consumers back then only eat what was considered favoravle to be edible such as pork belly, the other parts like head, ears, tongue and feet are either thrown aside or just fed to animals. The parallel here comes at both dish improvised what was left and made it edible thus their history was made.

Sisig is a popular Filipino dish known for its savory and tangy flavors. Its origin can be traced back to the culinary capital of the Philippines, Pampanga. The exact origin story of sisig is not entirely clear, but there are a few popular theories. One theory suggests that sisig originated in the 17th century when Spanish colonizers introduced the concept of "segisig" to Pampanga. Segisig refers to a method of cooking meat by grilling or frying it, resulting in crispy and flavorful bits. Over time, the locals adapted and transformed this cooking style, eventually creating what is now known as sisig. Another theory points to a more recent origin in the mid-20th century. According to this version, sisig was born out of necessity rather than a deliberate invention. It is believed that Aling Lucing Cunanan, a Filipina restaurateur in Angeles City, Pampanga, was the first to popularize sisig. During the post-World War II era, Aling Lucing repurposed leftover pig heads and offal to create a flavorful and inexpensive dish. She chopped, grilled, and seasoned the pig parts with various spices and vinegar, resulting in the delicious and unique sisig we know today. Regardless of its precise origin, sisig gained popularity in Pampanga and eventually spread throughout the country. It became a staple dish in many Filipino households and is now enjoyed in various forms, including pork, chicken, tuna, and even vegetarian options. Sisig is often served sizzling on a hot plate, topped with chopped onions, chili peppers, and a raw egg that cooks from the residual heat. It is typically enjoyed as a pulutan (appetizer) alongside rice and cold beverages, making it a favorite dish during social gatherings and drinking sessions in the Philippines.
