It's also good to dry-age them in the fridge, on a wire rack, at the bottom shelf (to prevent exposed meat from affecting your other food). Different people have different times, but I would say the best is 8 - 12 hours for a reverse-seared rare steak. For medium rare, I would let it sit in the fridge for 18 hours before reverse searing.

I dont know whoever told you to put that much salt on beef, but they told you WRONG! You put your untreated room temperature steaks in a warming oven at 150 deg for about a half hour. This opens the fibers of the beef. Then you LIGHTLY SALT, pepper, and light steak spice on the meat. Let stand for 15 min while the fibers draw the spices in as it cools. BBQ over medium heat. Never salt your beef like that. And, yes, i know because I'm a butcher.

@@buLLetproofJBE I am. And I know. I know how meat reacts to marinades. I know how to PROPERLY cook all meats. If you don't like my expertise, then ignore it. Then you continue to cook meat without knowing the best methods to cook it. If you don't like my expert suggestions, just continue what you are doing. And don't go away mad, just go away. Simple, right??
