    It’s crazy how simple char siu restaurants can get multiple Michelin stars, while for Filipino food it has to be unrecognizably bougie before it can get a star? If you have budget to fly to the Philippines, you should try Toyo Eatery in Makati. They also serve amazing multiple course Filipino meals featuring locally sourced ingredients.

    Michelin stars are not about the menu or the variety. It’s more about the quality and consistency of preparation and of course, the flavor and taste. The more selection you have in your menu, the more things you will be judged on so it’s actually more difficult to win a star that way.

    Name a street food stall in Manila worthy of a Michelin star. The street food scene in places like Singapore or Bangkok are on a far higher and more complex level than Manila that's why you don't see "simple" Manila or Filipino restaurants get Michelin stars.

    I ate at Kasama last month. It's more of a French Filipino fusion restaurant. The truffle cream croissant was the highlight of the meal. Kasama was more memorable than Alinea for the weekend food trip. They do breakfast during the weekends. No reservations, get there early.

    @@Alibadbad he is right! it's not really filipino, just named after Filipino dish. It's more like Japanese French cuisine (judging by the techniques) featuring Filipino lol I ate a lot of French & Japanese Michelin Star places and no way I won't recognize this .

    Damn, I’d never thought I would see Gourmet Filipino food. That Kinilaw and Nilaga are unrecognizable but props to Kasama or Companion in Filipino for getting a Michelin star. Glad you enjoyed the food Mike.

    @@enigma5014 they’re still Filipino dishes regardless of what other cuisine they put in there. The problem with elitists is that everything has to be of a certain caliber to call it “Filipino” food yet we’re fine with celebrities who have only half or quarter of their Filipino blood in them calling themselves Filipino. You gotta choose a side man, it can’t be one or the other.

    it is mostly french with a little Filipino twist. Putting calamansi, making adobo out of mushroom, unrecognizable kinilaw, and a5 nilaga won't make it Filipino.

Can't we look at this as an evolved form of Filipino food, a more refined and modernized version. Traditions and traditional cooking has its place but let's not use it as a hindrance for innovation in our cuisine.

    Metiz and Hapag are also amazing restaurants that have menus that evoke nostalgia from reference points that are undeniably and unapologetically Filipino. The Michelin may not make sense here in the Philippines but there are chefs here who execute at that level. I miss Chicago and I'm so stoked we have such amazing talent doing awesome food

    I love Filipino food! I've spent time in the Philippines and had eaten the best traditional dishes and also many street style food. The presentation here looks great, but the ingredients are way more Euro-Asian fusion than Filipino. But if the food tasted Filipino yummy good, that's all that matters... unfortunately I won't find out since I can't afford to eat at a Michelin star cafe lol!

    I’ve been to Brazil Express Grill multiple times at night for the buffet, and their service is AMAZING! They literally swarm you with the skewers of meat the moment you get your plate, no waiting, it’s awesome

    Its a bit unfair to call it filipino. This doesnt really introduce anything to the world. Just cuz they put “adobo” in the menu. Its kinda like the equivalent of having sprinkling tajin or chamoy on some food and calling it mexican.

    @@azcontent I would love traditional filipino restaurants to have more acknowledgement in the industry. Although, the reality is that it's taking a long time to get there so if a fusion can act as a gateway to attract higher status then they're a doing a great job of doing it since people would be more curious about it. Also, it would help actual genuine filipino restaurants or even be curious enough to travel to Philippines to taste genuine filipino food and maybe then a michelin to a legit filipino restaurant. I also said it's a great introduction to filipino dishes. If you look at their breakfast menu, there is still essence of filipino dishes. And the dinner is filipino inspired so theyre not making a false advertisement. Plus some filipino dishes are a fusion of either chinese/spanish/mexican/american so if they're using french style to elevate the flavour while keeping the core ingredients would, what's the difference? it's called evolution.

    I saw the video the first time that you went to PappaRoti in Chicago and decided to look it up. Imagine my utter surprise and delight when I saw that they had one in Omaha. Omaha doesn't usually get these types of places because of it's size. I fell in love with them, just like you did.

    Maybe, although I'm loving the neighborhood hangouts like that Korean place. If the decor is unpretentious and the smells slap you in the face as you walk in, it's going to be good.

    Wow ! ,Michelin Star Filipino restaurant ? Basically food prepared and cooked in a more sophisticated way using those high-quality ingredients, unique style and execution , and I guess would be very expensive. But we, Filipinos are so used to a more informal and traditional way of cooking and eating our dishes. They looked so incredibly impressive and tasty, but I can't really see them as "Filipino food"

    I watched the documentary Ulam on Hulu recently, and while I 100% respect the chefs' craft and hustle, I do want to reach a point where people can eat Filipino food that doesn't have to be super bougied-up, doesn't have to be served carinderia-style, and doesn't have to be from the uninspired McChains of fast Filipino food. They can eat at a modernized, cozy sit-down restaurant and devour a bowl of homemade bulalo etc., as easily as they would devour a bowl of pasta or kimchi jjigae.

    @@biyenzema Did you watch the movie? The chefs on it were taking a stylized gourmet approach to their favorite childhood Filipino foods. But overall their goal was to get the public more enthusiastic about Filipino flavors and cuisine. I know it's not the norm for the majority of restaurants. But let's face it, the mainstream ain't ready for a steamy bowl of dinuguan and rice, eaten as is. I'm just saying I hope "homestyle" Filipino cooking by a restaurant can also find its way to the trendy urban diner's heart/stomach, without having to resort to gourmet prices and presentation, and not targeting the affordable options to just the Filipino diaspora. Like Max's, but better.

    Grew up in Chicago and every Filipino I’ve talked to had the same opinion. Believe me when this place opened it was a hot spot. Without being negative eat the pastries. Meaning when you ask someone from chicago how kasama was they’ll answer the pastries were really good and pretty much stop there.

    I know this is a Filipino restaurant but I couldn’t recognize the food at all just by looking at them. 😅 Maybe that’s the reason why they got their Michelin star, by changing the food appearance but retaining that Filipino taste.

    Yeah, a lot of michelin starred restaurants are like that - I would think they emphasize more on creativity and reimagining traditional dishes and retaining the essence of the dish but of course that is relative to everyone’s preference. If anything I’m just proud I guess, looks cool although definitely not traditional :)

    Congrats, Kasama! Not all of those dishes felt right, coming from a Filipino that grew up on Lola's cooking, but they all looked delicious and they definitely weren't afraid to try out new things and really bring a gourmet feeling to Filipino food, reaching new people that might not have tried it before. That giant beef pot at the end had me squealing, it was practically ALIVE with how much it was boiling. XD Looked great, and hope you didn't burn your tongue/throat/mouth! Thanks so much for always making my meal times a bit more delicious by watching it with you, Mikey. ^^

    There is is a great place in Dallas called DaLat(the noodle place ) DaLat(the pizza place also awesome) I think ..they have two places beside each other one is pizza one is noodles ..but the noodle one has that same dish with the crispy roll inside the spring roll.its a 10/10 on taste.. texture ..presentation . Love the content Mikey hopefully see you at the state fair again this year .

    I agree, that lumpia is more vietnamese way of eating spring roll because in vietnam, we sometime roll crispy fried rolls with lettuce, herbs, and rice wrappers

    It’s great to see the creativity in these dishes, but it’s tragic that Filipino cuisine doesn’t get more recognition. Where’s the Michelin stars for a traditional Filipino restaurant? When done properly, the Philippines has some fantastic food.

    The answer is simple. Where is the uniqueness? I'm filipino. Yes, I automatically recognize our food. But to a global(and western) palate, the firs encounter elicits confusion as to what is being tasted. "I feel like I've tasted something like this before. Chinese? Malaysian? Spanish? Thai? Trick question. The answer is ALL OF THE ABOVE. So filipino food is not unique...it's trying to be everything. Anyway...it's just my opinion.

    @@GuyVinmara you do realize that Filipino cuisine is fusion cuisine just like our ancestry and culture due to indigenous, Chinese, Spanish and USA contributions to our history and cuisine. Filipino culture and cuisine is basically halo halo and unique in its own right. There are no other cuisines just like it. Its most similar to USA Southern cuisine which is also hodgepodge in its origins.

    Filipino food is meant to be hearty. This is definitely a delicate fusion of other culinary styles with focus on the presentation (and I’m sure the flavour as well) first. None of the dishes were recognizable in comparison to its original version. Appreciate Mike’s enthusiasm and love for many types of food from different cultures and kudos to the restaurant for placing themselves on the map.

    I’m Filipino and I work here. I’m seeing some comments about how people might get the wrong idea of traditional Filipino food from this or this isn't traditional Filipino food. I want to clear things up. Kasama does a fine dining, Filipino inspired tasting menu. They even say it on the website when you try to reserve a table for dinner. What that means is that each course you get should remind you of a traditional Filipino dish. Is it truly “traditional,” no, but it is an interpretation of Filipino food in a fine dining setting. If you are a Filipino trying the dinner menu don’t expect it to be like your family’s home cooking. Try and experience Filipino food in a new way. Don’t compare it to something you used to growing up with, the Michelin star shows that this restaurant is something you can’t experience any where else in the world and is worth the trip. If you are also Filipino, then you should be proud that there is a restaurant out there that is trying to showcase Filipino food in a more elevated setting, this is amazing for us! On a side note if you have to try the place go in the morning when Kasma runs as a cafe. The traditional savory dishes are amazing and the pastries are to top tier. I don’t know when he was at Kasama recording this but Kasama also won “Best Pastry Program” in Chicago so they earned 2 amazing awards this year alone.

    gosh!! exactly!! Im so happy to see a filipino good in fine dining. It’s been my dreams. I have a lot of foreigners friends and even my partner is a foreigner but they always uninterested to eat filipino food. Doing it in a different way (fine dining) might be a good idea to introduce to them my food.

    I’m glad that there’s a Filipino Michelin-star restaurant but honestly, the dishes are basically Filipino dish-inspired rather than Filipino. I wonder if they taste anything like the original dishes. Thanks for featuring the restaurant kasama. Good to know. Maybe if I ever visit Chicago again, I would put it on my list of places to visit.

    Their traditional versions are already good but their glorified fusion versions looks really good and elegant. It’s a must try for every Filipino who wants to judge it themselves

    I'm happy to see an Asian owned Michelin star restaurant, I don't see Filipino flavors. It's French and Modernists techniques on high end dining using acids from the Filipino foods.

    @@clarissakrigger4599 For sure try pork adobo, pancit, chicken papaya, sisig, mikki, embutido, and pinakbet. Those are my favorites. Not a big fan of menudo but you might like it. I do not recommend balut. I can't even look at it let alone eat it. Hahaha.

    It doesnt look very Filipino though, it looks very cosmopolitan French, Spanish and southern Italian with a few island ingredients! However it does look awesome and if I ever dare to go back to Chicago I'll put it on the list!

    They went for that presentation. There’s some Japanese influence as well there. The foods themselves are Filipino but the plating and presentation is French and Japanese influenced.

    @@tigernotwoods914 agreed, if you try to take dishes from a country known for more homestyle dishes and fancy it up to Michelin level it might not translate, but of course Filipino food has always been an amalgamation of local and European influence! I love their food, I might someday try this place, but I would rather find a real Filipino resturant and eat like a local!

    Chicago attracts the best chefs in the world. It's wild. I miss the food there. Lived in the area for 20+ years. It's unrivaled for it's variety. Chicago is a nexus of culinary delights.

    The truth is, if Filipinos present their food the way they're used to prepare it... They would not have a Michelin star like this restaurant. This is definitely Filipino food, just presented to fit the trend of the modern cuisine.

    Honestly just to hear him describe the food and how it was presented was very extravagant and every bit of gourmet. However I'm sorry for whoever's going to read this comment, but I swear to God it look nothing more than a Japanese Filipino fusion. With heavy on the Japanese. I praise them to get a Michelin star, cuz it's very difficult to get one, however I did not see Filipino food here.

    You can get that truffle crossiant during the daytime - that is if they don't run out. It's amazing. Really rich, but tastes amazing.

    Let them be honest that it's Filipino Fusion Food. Their food selections don't look similar or familiar to many traditional Filipino dishes so they seem unrecognizable to us. Ordinary Filipinos would never get to eat at such a fancy and expensive restaurant, however. The bigger problem is, those Westerners lucky enough to eat there will get a different idea or a misconception of what Filipino food is like and then they will have a big let-down when they finally travel to the Philippines or eat at a normal Filipino restaurant abroad.

    Agree! While I am happy that we finally have a Michelin star Filipino restaurant, I hope going forward more true Filipino food gets recognized by Michelin as well so ppl really understand the flavors of our food. It annoys me sometimes when Filipino food is boxed under 1 cultural category by the West. They need to understand the influences in our food cannot be defined by just Asian.

    So fancy, I love it. You got me at kinilaw. Been eating kinilaw since I was a kid (I can even make it now) and I also love caviar, so sold! 😅 no wonder it got a michelin, the overall presentation looks yummy and worldclass. Hope they maintain their star or get their 2nd 💜

    Traditional cooking of every cuisine has been altered/improved/changed for the taste preference of who ever the restaurant is serving. It's not only filipino food. They will eventually be curious and try more "traditional" dishes. Kalma lang guys.

    Nice to see there's a Filipino restaurant that got a Michelin star. I wonder how the food really taste like? TBH, an ordinary Filipino from the Philippines would not recognize the dish presented, but I guess that's what it takes to get a Michelin Star... Regardless of what I think, we have to give it to Kasama for leveling up the standards!

    I've picked up lunch from Kasama (kalamansi juice, tocino, rice, eggs) and they are exactly like what we would have typically. This is just their fancy dinner service with pre-set menu. I don't think I would go to this one, the breakfast/lunch menu is enough for me (still a bit steep in terms of price)

    Its not Filipino food. Its gourmet food using some ingredients that are endemic in the Philippines like Calamansi etc. No addidas, no kwek kwek, no lechon, no sisig, no diabetes induced, heart attack loving foods. Its not Filipino food at all.
