Hi friends! This umami seasoning is just about the most underrated ingredient in the vegan/vegetarian's flavor arsenal. Dare I say, it's even better than nutritional yeast. It's 100% natural, easy to make, and you're going to want it on everything you're cooking! More details below.
If you didn't guess from the title, it's mushroom powder. But not just from any mushroom; oyster mushrooms!
When oyster mushrooms are dried, their savory flavor is concentrated and enhanced. It's not the same as just cooking down mushrooms. Oyster mushroom powder becomes its own thing. It's like a natural form of MSG or Accent, but with a greater depth of flavour. You don't need a lot to add a lot of depth! However, it's salt-free so if you aren't living a salt-free lifestyle (like most of us) make sure you pair your mushroom powder with a bit as well.
In case you were wondering, I used a half pound of fresh oyster mushrooms. After drying and blending them into powder, they became a packed 1/3 cup (28 grams) of homemade oyster mushroom powder.
⚠IMPORTANT⚠ There is some risk when eating RAW Oyster Mushrooms. I dehydrated mine at a very low temperature and use it in my cooking. If you are adding it to foods which will not be cooked further (like cold salads or popped popcorn), please dehydrate them at a minimum of 165°F to be on the safe side.

I'd recommend drying various mushrooms. Each variety has a unique taste. Whilst you're drying all of this stuff, dry your organic citrus peels. Then powder them. The citrus powder is very useful. I have orange, tangerine, lime, and lemon.

I do this with shiitake mushrooms, I haven’t tried oyster mushrooms yet. I always add food, grade silica gel packs, so they don’t soak up moisture from the air in my Masson jars 😊

I love to use mushroom powder, just like this. My favorite is a mix of shiitake and boletes (Porcini is best known and easy to find in bougie grocery stores, but if you live in a mushroom-friendly place, you're likely to find others for much cheaper at markets. Bay boletes are my favorite.) Roughly a 3:2 shittake-to-bolete ratio by weight, since dried boletes have a somewhat stronger flavor than dried shiitakes. It's got everything. It's super savory, but also a little sweet, a little earthy, and it has such a rich aroma. You can make an amazing cream sauce using fermented cashew buttermilk, shiitake-bolete powder, and some salt. It's got a beautiful speckled appearance, and it goes great with pretty much anything you can throw at it. Pasta, schnitzel, biscuits, frikadeller, burgers, steamed veggies, mashed potatoes, you name it. Just gently heat the cream in a saucepan while stirring until steaming and frothy, add the mushroom powder a little bit at a time until you reach the desired thickness (keeping in mind the powder takes a little bit of time to fully hydrate), salt to taste, and you're done.

I have a large container of dried mushrooms from Costco, that I've been reluctant to use because I don't know what to do with them. Now I think I will just grind some of them up like this and use it for seasoning everything! Thanks.

Throw the mushrooms (powdered or in chunks) in while you're making broth. Whether you powder it for this depends on whether you like the texture of that variant of mushroom. You can also leave the mushroom whole if you're planning to remove the remaining solids anyway, most of the flavor leaches into the water within 20 min in my experience.

In my experience, it's more affordable than buying the powder too!
I use this all the time when making chickwheat. It's essential for getting the right flavor! I've also found that boiling king trumpet mushrooms brings out a pork like flavor. Although I'm not sure that flavor would keep if you dehydrate them afterward (had that problem with lion's mane), but I usually puree them and add it to whatever I'm trying to make pork-like.

If you want an easy off-the-shelf substitute, most "Umami Seasoning" blends are powdered mushrooms with a few other seasonings. It's a staple in my house for anything mushroom-based or beef-like.

I realize this is an older video but if you're in the US, both Trader Joes and Target carry delicious versions inexpensively. I always have some on hand.
They do sell grow-your-own mushroom kits online, and they have a lot of harvest potential and I was always worried that I wouldn't be able to use up all the 'shrooms. Now I know what to do with them!
Oh goodness. Now I have to do this with every mushroom!😂 My family is really gonna enjoy seeing one more thing being added to my seasoning section!

I have a half bag of dried oyster mushrooms that I didn't know what to do with, so I'm definitely going to try this! (I bought them thinking that I could rehydrate them and use them in cooking, but no matter how long I soaked them they were as tough as a shoe!) Now I can finally get some use out of them!

Mushroom seasoning is a bit different since they are normally made from mushroom extract (rather than whole mushrooms). But definitely super yummy!

My farmer's market has a mushroom man. So I get fresh and dried schrooms from him and he has mushroom powders already made. So I have a shiitake powder that I use in my ramen broth and a mixed blend powder. And my mother gave me a seasoning blend that was mushroom based. So yeah, I use mushrooms and mushroom powders a fair bit even though I don't technically like them, lol
I'm convinced. Living in the boondocks, I have to grow my own exotic mushrooms, so adding some oyster mushroom kits to my quarterly mushroom order today. I already grow shitake, north spore, and reishi, dehydrating the excess. Why not branch out! Nooch will still be in the rotation for my non-Asian recipes. It seems to "beef up" soups and stews, and it makes cauliflower curry extra tasty. Thanks for the information on oyster mushroom uses.

You can get shiitakes much cheaper. Won't taste the same, but I can get a pound of PRE DRIED shiitake for like $17, and with weight loss factored in that's roughly equivalent to 5lb fresh plus saved labour. 3 oz of dried shiitake for $3ish plus no work VS. The equivalent of 3-4oz dried oyster for $45 and ~2h work No brainier for me, but then again I like nooch too lol If only mushrooms became the new super food so they'd suddenly be available everywhere at prices people will actually pay like what happened w gluten free bread 😢

Ooh, i am ALL about the spices/seasonings! I eat tons of beans and lentil-based recipes, so i also go through tons of spices and seasonings. I also LOVE mushrooms. Per use, oyster mushrooms powder probably isn't that expensive. I am deeply addicted to nooch - i need my fix whatever the price

If your nutritional yeast is flaky, try putting it through a spice grinder or small blender. It won't save the nooch if you just don't like the flavor, but having it as a fine powder is a game changer for using it as a popcorn topper or as part of a pasta sprankle. Also try adding it to your next batch of veggie stock, it'll affect the clarity but lend some nice umami.

Asian grocery stores sell mushroom powder. It usually has salt, MSG, and/or other additives, but if you don’t have time to make your own, it’s delicious. Another shortcut is buying oyster mushrooms at the Asian grocery store that are already dried.

I wouldn't say this is a substitute for mushroom seasoning (the kind you are referring to that is made from mushroom extract) but you can use this mushroom powder as a component to a homemade mushroom seasoning.

@@randommusings48 have you tried my soymilk recipe 2.0. That one is less beany tasting. Basically, you boil the unsoaked beans for one minute at the beginning. And never soak them in cold water.

Thank you so much! most of the time, mushrooms are grown in a sterilized substrate material so any crumbs on them aren't really dirt. BUT if they are really dirty for some reason, it's honestly fine to wash them. Then squeeze them to dry :-) The water won't ruin the flavour since you will dry them out anyways

Oyster mushrooms are among the easiest mushrooms to cultivate at home, and it eliminates the problems of trying to keep them in a grocery effectively. Then dehydrating them fixes the issue of keeping them long-term entirely, and this should be practical for small batches of them cropping up consistently, a normal fruiting pattern.

@@marystestkitchen Don't be! The grow kits are an easy way to start, and KZread is full of video tutorials for growing them from grain spawn. Oyster mushrooms do well in normal comfortable household/cellar conditions. We've grown bunches of them for a few years now, and winecap mushrooms in outdoor woodchip beds too.

I bought some dried porcini powder online and, as you say, use it in everything. Porcini and shiitake seem to be the only mushrooms I can find dried though. Idk why you can't just get field mushrooms. Maybe I'll have to do it myself!
I made this by accident once. I forgot a few basis brown mushrooms in the back of the fridge in paper bag and they were totally dried out. Blended them up and they were really tasty. 😂
I'll try to make it ... if I don't eat the mushrooms first 🤤

I just purchased mushroom seasoning yesterday 😆 It wasn't cheap but sooo worth it and I'm wayyy to lazy to make it myself, though I blended some dried shiitake from the asian store once, which was awesome!

I've actually done this lots, for over a decade, using already dehydrated mushrooms. I often mix it with nutritional yeast, korma spice, garlic powder, hemp seeds, and flax seeds for a really healthy and delicious seasoning. How would I do this if I dont have a dehydrator? Lowest oven setting? (Or would that be too hot, you think?)
I dry them in the sun in summer.

Good nooch yeast has B Vitamins up to 12 though so it has oats important supplimentary function. Sure this mushroom powder tastes wonderful though!

I picked up (a few) at Goodwill!
I buy dried shiitake in bulk because it's way less work and I can get them for a bit over a dollar for an ounce of dry weight. They lose about 4/5 of their weight during drying, so that's about a buck for about 5 ounces of mushroom. I don't even know where to get oyster mushrooms locally regardless of freshness, and the dried ones online are like $9 for 2oz. Is the difference worth it?
I don't have a dehydrator or oven, is sun drying ok? will it still retain most of its nutrients and flavor?

I wanted to ask this on your most recent video even though you aren't making tofu. Do you have to have a high end blender like a vitamix or blendtec to make the non-soy tofus you have been doing? I am interested in trying this, especially the pumpkin seed one, but if it's not going to work on my 100 blender I don't want to waste the ingredients.

I currently use a Vitamix. However, I started out using a $30 Oster blender back in the day and can say with confidence something like that can work too. You'd just have to blend for a longer time and pay attention to making sure the particles get as fine as I show in the videos.

Good question. Come to think of it, I've only had this incorporated into cooked food. But I think perhaps if you dried it at a higher temperature (like 165°F), it should be safe to eat. You'd probably want to double check that to be safe tho
Are there mushroom varieties other than oyster that are good candidates?

In my opinion, ALL mushrooms are good candidates for making into a tasty powder. But this one is my favorite because it's mild, not so earthy while being very savory so it's more "all purpose".

Yes but the flavor is totally different. Button mushrooms are much earthier. But good in their own way too!
ugh but i hate mushrooms sooooo damn much! my main issue is the texture though. i probably wouldn't hate the taste as much if it didn't feel like i was eating poop. i would try a tiny bit of this though. i have been seeing sauce stache using the hell out of mushroom seasoning a lot lately and everytime a shiver goes down my spine in a bad way haha

I'm just curious because I have heard that there may be a correlation between a person's personal but unexplained aversion to a food item and an actual allergy or intolerance. Something about the body/mind instinctively trying to protect a person from an unsafe for them item.

Raising prices is a real problem lol But just fyi, this mushroom powder isn't the same as mushroom seasoning which is more processed and concentrates the natural msg (more common in Asian stores; I've never need mushroom powder there)
My DIL is allergic to mushrooms. Am wondering if this dried powder would still cause a reaction? We all love vegan food and if I use this in a recipe, I'd feel horrible if it affected her

This powder is made out of mushrooms so if she has a mushroom allergy, she should not be exposed to it. I wouldn't even risk making it in the same room!

I tried so hard to like mushrooms. I thought grinding them into powder would help me be able to add small amounts to my meals so I could slowly adjust to the taste.. It didn't help...
