In Part 2 of my Mai Tai series, I'm taking a look at 2 of the important Mai Tai components. The Orgeat Syrup and the Orange Liqueur! Just how important are they? Can you use any old Brands? Or should you stick to the Original?! The Pierre Ferrand Dry Orange Curacao. We know the Mai Tai Rum blend is important but is the rest of the ingredients?

Trader Vic didn't use Pierre Ferrand Dry Curaçao. The first Mai Tai by his own admission was made with De Kuyper Orange Curaçao, because that was what's available.
Great video Steve ! Really like this series so far. Tried a Mai Tai spritz this weekend. 1/2 volume the ingredients from a Mai Tai and 4oz Prosecco. Fantastic!
I make my own mixers in general because I make mine from artificial sweeteners. I have been making an orange liqueur that tastes a lot like Cointreau and I make an Orgeat that is a little creamy starting with Almond Milk. Both use Splenda for low carbs.

'a' is pronounced the same as in 'father' ('e' has same use as in George gorge and final 't' is muted)
Great video Steve.. The Clement orange was amazing on the taste along have to try this Mai Tai. Have to get a bottle of Clement orange now 👍

Great Video! That using good ingredients makes better cocktails is a nobrainer. Using Meneau Orgeat instead of Monins really improved my Mai Tai! But I‘ve just tried it with Pierre Ferrand so far. I like it but am looking forward to playing around with a few more orange liqueurs aswell!

I've made my own orgeat before and it's a bit of a faff, but rather fun. I usually use liber and co's toasted almond orgeat because it's widely available where I live, and honestly I love the stuff. Regarding making my own orgeat, I used a recipe I found on KZread from The Wee Pearl. It was VERY delicious, but I haven't been bothered to make it again.
Hello Steve. I use orgeat syrup from biocoop but I do 50/50 with cane sugar because I find that it smells like crushed bugs when you only use orgat 😝. And for the orange liqueur, I make it with vodka and orange zest. For more complexity you can use a slightly aged rum or cognac but the Napoleon must be very good too. Cheers Steve 👍
I’ve always made my own Orgeat and it turned out great every time. This also allows me to play with the ingredients to match my taste. For example, I prefer more rose water than most people. Also, I get to choose the type of sugar I incorporate. Then you get to experiment with other flavors like cashew orgeat, etc.

I have homemade orgeat too,..and do u have same issue that ur orgeat ,.after mixing in drinks,..the liquids seperate,.i mean particles of orgeat separates

I haven’t seen/heard of Rose Water in Orgeat for years. But agree the few I tried 617 years ago were excellent. But we’re lucky if we get Orange Blossom in it these days…let alone Rose. 😂

@@_-_-_-Prof.BoskoBiathi-_-_-_ I have in the past, and part of the difference might be choice of heating vs not heating the orgeat. The latest batch was made without the introduction of heat, and it seems to stay together better than before. However, if you're feeling adventurous, then you can 0.3g of gum arabic and 0.08g of xantham gun for every 100g of almond milk. This will definitely keep things together. My preference is to skip the extra chemistry and stir my drink as needed. Hope that helps!

@@_-_-_-Prof.BoskoBiathi-_-_-_ the reason for that is because almonds or nuts in general has oild in them and oil and water doesn't mix together. Solution is to add small amount of xanthan gum to bond those 2. Watch Cocktail time with kevin ko's orgeat recipe.
How can you tell if a syrup will be shelf stable? And if it says refrigerate after opening do you really need to?
In my experience and opinion, by and large, you really do get what you pay for. Good vid.
Currently Monin and Fortunella, but I think I’ll try ODK and without a doubt the Clement liquor, currently struggling with Covid so enjoying a Mai Tai seems a little distant😥

For orgeat in the US my splurge is Liber & Co. and my mainstay is Liquid Alchemist. Both are good, but I think the Liber has more of the solids that give it a little more nutty heft. I do prefer Ferrand as it's less sweet than Grand Marnier but I do like either one. I'd love to try the Clement. I've not looked for it so I am hoping that I can find it stocked near me.
2:1 syrup with a full-fat almond milk as the base. add a couple tablespoons of almond butter, maybe half a tablespoon of orange blossom, teaspoon or so of almond extract (it provides a very different flavor compared to the sweet almonds we typically eat) per quart. some salt and maybe a little vanilla if you're inclined (seriously just taste it as you're making it, you'll know when it starts to taste right). you can mess with thickeners if you want, but it's not really necessary. blend the whole thing well. optionally strain (there will be some fine sediment from the butter that slowly settles. it's harmless, you can just shake the bottle to resuspend it before making a drink). takes like 10-15 minutes tops. is it "better" than a decent quality commercial orgeat? idk. I'd say it's comparable, but you can tweak it to your own preferences. that said it is much, _much_ cheaper. not that orgeat is excessively costly, but it can add up if you use a lot of it.
I bought orange blossom water so will add some to my orgeat syrup next time I make a mai tai cheers Andrew

Banana isn't one i've tried.... why? cos i'm scared! i'm so loyal to Giffard's posh Banana De Bresil Liqueur, that i'm scared I'll like Catron's more. Doubtful. VERY Doubtful cos Giffards posh one is Epic. BUT, you never know....
unfortunately for me, where I am here in the states 1: I cannot get liquor delivered and 2: the vast majority of the orange liqueurs you listed simply aren't available to me through any currently known source. I have seen the Clement Creole shrubb and Mandarine Napoleon, and I'll have to give those a try! I personally do like the PF dry curacao, but I've yet to try some of the options you provided in this video, so I'm excited to give them a try.

I think that’s the thing we take for granted in the UK. No only do we have the biggest selection of booze, we can get it delivered next day. It’s amazing and dangerous at the same time 😂
I make my orgeat from scratch, though I haven’t tasted any commercial brands so I’m not sure how to compare! (U.S.) Thanks for the Rum videos, Steve

I recently saw a tip somewhere to combine Grand Marnier for darker notes and Clément Créole Shrubb for brighter notes and it's great in a Mai Tai. If I only had one option I think I'd stick with Cointreau. Something about Pierre Ferrand that didn't work for us.

I prefer Senior Curaçao for the orange liqueur in Mai Tais. I actually find Pierre Ferrand makes the drink too sweet. I also like Marie Brizard. Sometimes I like to use Amer China China (similar to Amaro Ciociaro and Amer Picon) which adds a little more spice. I also like Gator Bite Satsuma (formerly known as Bayou Satsuma), but you probably get that in the UK
Orgeat is the French word for almond and so the T is silent. It's roughly pronounced as "orzsha". I've made my own orgeat a number of times and it's really good, but it just doesn't last long enough and it's a lot of effort. I'm currently using Bristol Syrups. After watching this I might try adding some orange blossom water to the bottle. I'll look into the other brands you've suggested for next time. Orange liqueur wise I've only tried Pierre-Ferrand, which I prefer to Cointreau or De Kuype but I've never really thought of trying anything else. I'll look out for your suggestions there as well. I'm French, no the French word for almond is amande. It's not pronounced "orzsha" it's orja (J like in Jesus but without the D sound).

Orgeat comes from the French word Orge which means “Barley”. Orgeat used to be sweetened barley water but then moved over to almonds. When I make my Orgeat I actually start with a base of Barley water instead of regular water and it really enhances the mouth feel
I make my own, very easy with almond milk and basically no taste difference from almonds from scratch. A pinch of salt is key. So 50/50 sugar and almond milk, a drop of orange water, and salt to taste.
I started my journey with Master of Mixers orgeat, but now I make my own…I just call it almond syrup because I can pronounce that!
Also, if you haven’t tried Merlet Trois Citrus you should! Its a great triple sec!

The thing is, all Alcohol will “burn your throat”. It’s the nature of alcohol. It’s just some brands mask that Burn (or as we may know it, that Barrel aging and alcohol)…they mask it with Sugar. That’s all it is. All 40% spirits have that heat…it’s just some opt to mask it with loads of additives.

Steve, I googled the pronunciation of orgeat and a KZread video gave the french pronunciation as "Or Zhah".
I made a spectacular orgeat recently. This included blanching almonds and removing the skins, then toasting the almonds, then mincing them with water in a blender. Then I let it sit for an hour before squeezing the almond milk out using cheesecloth. Then I prepared a sugar syrup and added the almond milk. I also prepared some dissolved gum arabic and added it to the mix. Lastly I added orange flower water and rose water (a little goes a long way). And some vodka as a preservative. The toasting of the almonds makes all the difference. Next time I may add some vanilla and, if I can find it, xanthan gum to keep it emulsified.

Maybe. We’ll see how the series goes. But atm, yeah, cos the blend is amazing. But am I gonna buy 3 new bottles to replace it??! 🤷♂️
We have limited experience and I want to try new things but my wife hates Pierre Ferrand Dry Curaçao and I prefer Cointreau as well so we do that. I've tried Grand Marnier and it's very good but doesn't taste quite right in some cocktails. Years ago I bought De Kypers triple sec and thought it tasted like chemicals. I bought some Liquid Alchemist orgeat based on some reviews but it costs twice as much and I had to use twice as much as Giffard so the obvious choice for me is Giffard. I haven't been able to find Monin or any other at my liquor store (which is a huge store). It takes a very long time for me to go through a liter of orgeat I add a bit of white rum in my bottle and keep it in the fridge and it lasts a long time.
I make my own orgeat, Demerara syrup and orange liqueur myself. I find it’s perfect for my palate Although I do have a grand marnier stocked up as back up. (Currently in middle of making a homemade pear liqueur) 😉

Take off stove then add.... 3 tsps almond extract 15ml orange liqueur(or few drops of orange blossom water) 40ml of brandy/vodka Stir syrup and let cool! (500ml measure) Or 300ml almond milk 500g sugar (700ml measure)

Pierre ferrand curacao for me, and i make my own orgeat :) but as long as its not an almond extract syrup like monin hahaah
I have homemade and orgeat from monin,..
I prefer Pierre Ferrand because it's the driest curacoa I've tried. With the exception of Giffards all the others I've tried are too sweet and syrupy. Giffards is a better sipper than the Pierre Ferrand, but still prefer the Pierre Ferrand in a Mai Tai. Latitude 29 (Beachbum Berry's) and Liber & Co. are the only two orgeats I've tried. I really like the Liber & Co. The Latitude 29 is too sweet and syrupy. And I don't add sugar syrup to a Mai Tai (I'm an outlier). Just find the dryer it is the more vibrant all the flavors.

Or-zhaat if you speak english or Or-zhaah if you speak french.
Just like Giffard has a silent d, so has orgeat a silent t hence correct pronunciation is or-ja. BTW, I'm bilingual English/French so make of that what you will 😀
