Today, I'll be showing you how to make the easiest shortbread cookies ever with an orange and almond twist! These cookies are buttery, melt in your mouth, crumbly goodness with a refreshing citrus zing to it. They are so quick to make and come together in just one bowl using only one spoon and no mixer required!
While I use orange zest and sliced almonds in this recipe, you can use whatever flavorings and mix-ins you wish. The base recipe is very versatile allowing you to really customize these cookies to your liking! Yes! That was a TON of zest, I wasn't expecting to get that much from the orange, probably would've been enough for a double batch of cookies, but I just dumped them all in for the extra orange flavor!
Hi, Dan! These orange almond shortbread cookies look great. You are right: orange zest is full of flavor, so adding a lot would make these cookies very flavorful. Also, it is definitely true that the butter needs to be soft. If not, mixing would be difficult. Rolling the dough into a log and then cutting the cookies is a lot easier than rolling out the dough very thinly and then using a cookie cutter, imo. Wow, those cookies turned out great. Yes! That's such a great idea, the buttery rich shortbread in a hot mug of tea (or hot chocolate or coffee!) I also didn't skimp on the butter, it's not shortbread if it doesn't have enough butter ;) And yes, keeping them in the freezer means you can have freshly baked cookies anytime!
