Tips:
• Bread flour is a high-protein flour which produces more gluten. The flour is primarily used for bread baking due to its high - protein content, which gives structure and elasticity to yeasted bread . Bread flour typically contains - ranges 11 - 13 percent protein.
• Dough consistency varies depending on several factors such as absorption quality, amount of protein and type of the flour , fat content of the milk and size of the egg
• For some may find the dough sticky. Not all flours are created equal in quality . Each flour may absorb liquid differently, so if the consistency of your dough is too wet & seems impossible to knead you may add up flour . But avoid adding to much flour which may result to a dry and dense dough. Pour the flour gradually.
• If the dough is sticky type but manageable to knead then it's not necessary to add flour . If the consistency of the dough is too dry and dense , you can add liquid little by little , for example: add one tsp first , then knead , but if it's not enough, add more liquid as needed
• Different brands of flours can be slightly different in weight. If you have a kitchen scale , Weighing is a more accurate way of measuring than volume ( such as cups ) and helps make sure your recipes turn out right , that is the recommended method.
• For resting time, the time may vary depending on temperature , season & humidity . It is important to always pay attention to this. In winter the dough rest time may be longer, in summer it may be the same as the instructions in the video or it may be faster.
• The characteristics of donuts that are ready to be fried are very light when lifted, if pressed they will leave a mark and come back slowly

◽1 cup bread flour : 130 grams
◽1 cup milk / water : 240 ml
◽1 tablespoon milk / water : 14.7 ml ( 15 ml )
Ingredients :
250 grams ( 2 cups ) bread flour
90 ml ( 1/3 cup or 6 tbsp ) lukewarm milk
1 egg ( 55 grams with shell )
1/4 teaspoon baking powder
1 tablespoon margarine / butter
1/4 teaspoon salt
1 teaspoon yeast
3 tablespoons sugar

    In Southeast Asia, including Indonesia, Korea and Japan, high gluten flour (or better known as bread flour) is more often used in making donuts and bread because the results are softer and more tender than using medium-gluten flour or what we usually call all purpose flour. . However, if bread flour is not available, you can use all-purpose flour instead of bread flour. If the manufacturing process is right, the results can be soft, but not as soft as when we use high-gluten flour (bread flour).
