    Recipe: Ingredients For the Cake: 1 whole seedless lemon washed, quartered, and seeds removed 4 eggs at room temperature 3/4 cup olive oil 1 1/4 cup granulated sugar 1/4 cup sour cream 2 teaspoons vanilla extract 2 cups all-purpose flour 3 teaspoons baking powder 1/2 teaspoon sea salt Lemon Glaze: 1 cup confectioners’ sugar 1-2 Tablespoons lemon juice Instructions Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9x5 loaf pan, or line it with parchment paper for easy removal. In a blender, combine the whole seedless lemon (quartered and seeds removed), eggs, olive oil, granulated sugar, sour cream, and vanilla extract. Process the mixture until smooth, being careful not to over-blend. 1 whole seedless lemon,4 eggs,3/4 cup olive oil,1 1/4 cup granulated sugar,1/4 cup sour cream,2 teaspoons vanilla extract Add the dry ingredients (flour, baking powder, sea salt) to the blender. Pulse just a few times until the dry ingredients are incorporated into the wet mixture. Do not overmix. 2 cups all-purpose flour,3 teaspoons baking powder,1/2 teaspoon sea salt Pour the batter into the prepared loaf pan. Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. For the glaze, combine the powdered sugar and lemon juice until smooth. Pour the glaze over the cooled cake. 1 cup confectioners’ sugar,1-2 Tablespoons lemon juice

    Ladies this cake was fabulous, I just made it. I definitely would add a pinch of salt to the mix. Super easy to make, and my family loved that it wasn’t to sweet, but adding the icing gave it that beautiful sweetness. 100 % will keep this recipe for fast summer desserts.

    Thank you for letting us know it actually came out good. I was a little suspicious, lol. I love anything made with lemons. I wonder if you could add some fresh Raspberries or blueberries to the batter without ruining it?

    @@ShellyshockedI think berries would go well with this, just make sure you toss the berries In flour first so all the berries won’t sink to the bottom while it bakes.

    Looks delish. But can’t justify buying a new blender 😆 don’t use it enough. Maybe once a year for milkshakes or something. Mine was a Wally World special 25 years ago and even when it was new it would have never been able to “blend” a lemon like that.

    No recipe, how about this: I don’t like olive oil that way…so I’m going to use vegetable oil or butter, looks like it could be about 1/2 cup oil or 1 sticks melted butter… take 1 large whole (organic) seedless lemon 🍋 cut in 4 pieces and put in blender (like video) with oil or melted butter, blend and set aside. Prepare in a mixing bowl a Lemon supreme boxed cake mix…..then add the blended oil/ or butter & Lemon blend to cake batter, blend it well together, pour into your baking pan, bake according to cake box directions…make a simple lemon juice/powdered sugar drizzle. That’s what I’m going to try. DELICIOUS!

    I'm going to make this, but change out the sugar and regular flour for paleo flour and our replacement sweetener. I'll probably cut the recipe in half to make a smaller version and see how much I like the keyo type version 😊

    I wouldn't blend the whole lemon. The white part is bitter, n the seeds won't become smooth. Is best to take the time n zest it n juice the lemons first. Google search has many good recipes.
