The Dish: How chef Miguel Trinidad is putting Filipino food on the map

Miguel Trinidad started working in the hospitality industry as a delivery boy but found his way into the kitchen, and went on to culinary school and jobs as an executive chef. Then he met Nicole Ponseca, a Filipino native, and on a backpacking trip through her homeland, fell for its multicultural cuisine. They went on to open two critically acclaimed restaurants, Maharlika and Jeepney. Last year, they published "I Am A Filipino" named one of 2018's best cookbooks by the New York Times and other publications. He joins "CBS This Morning: Saturday" to discuss his culinary journey.

    I’m Filipino and while it’s nice to have our culture recognized, I really don’t want Filipino food to go mainstream 🤣 I love that Filipino food has a sense of exclusivity and that people will either have to find and fall in love with it themselves. I also don’t like it when they gentrify Filipino food or when they have a “fusion” or whatever. I prefer it done traditionally.

    Ganda Gandara embarrassing? No. I think karinderya is very authentic. What I meant is in America, Filipino food is only available in cities with a Filipino population and if ure non Filipino, only way u could get Filipino food is if u know somebody who’s Filipino and get invited to kainan. That’s what I meant by exclusivity.

    I think the great thing about Filipino food is that it's still evolving. There are no set rules to it and I don't think there will ever be any set rules. It's a young cuisine from a young culture and I'm excited what it will become in the future.

    Thomas Christopher White huh? Just because you discovered it recently doesn’t mean it’s a young culture and young cuisine. Adobo for example was “reinvented” by the Spanish in the 1600s when they found this dish that Filipinos cooked in vinegar. They just christened it “adobar” (to marinate) but it has existed even before they came.

    its not young, culture of spanish, chinese, american and more are incorporated with filipino dish for centuries, and it has been in the US for years, the food is already recognized as well...the most talked about was adobo, now added to the list were crispy pata, lechon, karekare, lumpia shanghai, and the dessert halohalo which is also served in jolibee as i watch mukbangs in youtube...but the evolution part i cannot disagree with that

    Para Po malaman nglahat, hindi Po young cuisine Ang Filipino foods, open Kasi Ang mga pagkain natin meaning NASA kumakain Kong gusto Niya maalat, matabang, maasim by adding salt, pepper, chili o lemon ganyan tayo diba pagkumakain kaya nga may saw- sawan, gets niyo.

    I wish they would stop saying "Multi-Cultural" to describe Filipino culture, food, and history. I am so tired of it. Most people when they say "multi-cultural" seem to think that it was something that only happened recently. Our ancestors in the Philippines created this beautiful culture that we live, speak, and eat through hundreds of years of joy, sadness, pain, and hopefulness. This is not some "fusion" of things that just happen to be in front of us right now. Our history is full of commonality and similarities with the surrounding cultures and peoples of Southeast Asia, the South Pacific, and Latin America- this is what makes us who we are, but we are not just one of those, we are all of those, and this is what makes us great! Stop trying to find greatness in how you want other people to describe you. We are who we are and that is great. Also, I want to thank our fellow Islenyo, Miguel Trinidad, for acknowledging our food and culture and appreciating it so much that he himself is appreciated for it. I am touched at how much he loves us.

    To all who are new to Filipino food, don't compare it to Thai food because they''re tastes are on both ends of the stick. Thai food is more on the spicy side. Filipino food, however, is more on the savory /salty side, usually paired with rice. Filipino food is more similar to Chinese dishes, mainly because it's largely Chinese influenced. So, if you wanna know what dish Filipino food tastes like, it's Chinese food, and a bit of Spanish, too.

    Filipino food is not for everybody, which is true for any other cuisine. At least they featured him on the show. Why do you have to be so pessimistic - nitpicking at the anchors just because they didn't show the reaction that you wanted...jeez. You must be fun at parties.

    Anchors are really eating and you can see their satisfactions with the meals ...but you have to understand it's working time ,so they"re are not suppose to eat as like lunch time ...but am sure after that everybody in the studio will have their sumptious lunch....even here in Lebanon when I started cooking our own foods , they don't want to try their Arabic foods anymore ....asking me why I dd'nt do it B4 , cz Filipino viands and delicacies, are much more delicious, nutritious and really tasty according to them
