The polygon spring is perfectly acceptable. Many small turns.
Nice work I wonder if a 3D printed spiral jig / template would be possible?

I was wondering about that myself, or you could use a wooden dowel with a slot.
3D Print a template to wind the springs. It would save much time and look better.
