The complete guide to making shredded vegan seitan chicken!
The un-chicken recipe of the year. Super easy and filled with flavors, this simple vegan chicken recipe will be a staple in your kitchen, you'll love it! I have made this recipe countless times until I got it right and during the process, I have encountered a few challenges to which I have overcome so I suggest you guys refer to my website (written down below) in order to find out the Seitan chicken "dos and dont's" and the most frequent doubts about cooking with seitan.

INGREDIENTS:
2 cups of cooked chickpeas at room temperature
1/3 cup of water or aquafaba
1 tablespoon onion powder
1 1/2 teaspoon garlic powder
2 tablespoons white miso
1 teaspoon mushroom powder
1 tablespoon apple cider vinegar
1 1/4 cup of gluten flour
METHOD:
Blend all the ingredients up to the vinegar. Reserve.
Add the blended ingredients to the gluten flour, mix everything until incorporated, let it rest for 15 minutes.
Divide the dough in two then add to your food processor and process them for 5 minutes at medium speed. If using a stand mixer, attach the dough hook and knead them for 15 minutes at medium speed. In both cases the dough will be very elastic and warm, that's expected. Repeat the process with the second dough.
Wrap the two doughs separately in parchment paper then in aluminum foil, not so tight otherwise, the papers may split open.
Add two cups of water to a pot, add the steamer trivet, add the two wrapped doughs, cover, and steam them at medium-high temperature for 2 hours. Add more water to the pot every 30 minutes, if needed.
After 2 hours, uncover the pot, let the Un-chicken reach room temperature while still wrapped.
Unwrap them and enjoy it!
NOTE: It can be frozen for up to 3 or 4 months and can be refrigerated for up to 5 days.

    this woman is absolutely crazy.. guys I made this recipe for my family and they said it was the best chicken they ever had in their life not knowing that it was plant base this is the best recipe everrrrrrrrrrrrrrrrrrr.. I end up throwing a whole batch away after trying to get the right dough consistence by endlessly adding more and more precious gluten flour. Can't start over cause I've run out of ingredients..

    🙄 and I thought I was a smart, resourceful cook.(apparently NOT! LOL) I already knew that in the back of my head, so why did I buy mushroom powder? I `think` b/c I'm totally new to vegan cooking. I >do like my meat, but I'm starting to try substitutes - for the animals and the environment.

    I'm so glad I found your channel the other day - my mind is racing about which recipe to try first. I think it will be this one because I needed an idea for dinner tonight and I have all of the ingredients - score! I don't understand why people freak out when you touch your food. I agree you need to get a feel for what you are making. I learned how to make tortillas when I was 9 and my mom made me work the dough with my hands. When your hands are clean there's nothing to worry about! I love listening to your accent.

    Jana, you said it so eloquently. I watched a basic video about making a tofurkey and so many people were making horrible comments about how vegans shouldn't be eating these faux meats because it defeats the purpose of being vegan. We do it because we can, because it's creative and so much fun. Also, these recipes help ease transition from a non vegan or veg diet. And the greatest part is no animals are harmed while having a blast in the kitchen experimenting.

    Thank you Chef Jana! This recipe is absolutely fantastic. I didn't have chickpeas so I used a can of red kidney beans instead, to see if I could make a vegan 'beef'. Much to my amazement, it worked fabulously! It looks exactly the right colour for cooked beef! After shredding it, I made an Asian stir fry with it, sautéing it with ginger, garlic, sesame oil and soy sauce + sriracha... my husband thought it tasted fantastic and would easily pass for beef. (I kneaded each ball for at least 6 minutes since I was doing it by hand. Great texture and very convincing looking 'beef' shreds). Can't wait to try with chickpeas for 'chicken' next! Thank you so much for this fantastic method!

    I swear to god i have tryed so many times to make seitan and failed so badly that its not even funny but this is for sure the best video hands down i have seen all round inc ingredient choice, I am really excited to try this thanks for being such an Ace star and teaching us this, really up for doing a mock chicken pie with this and some asparagus!!

    Hi Chef Jana.. I made the meat seitan its in my fridge..saw it yesterday on your utub channel and made it. It came out well.. just tweaked it a bit by adding beetroot water to the vegetable broth. Due to the variable moisture in the flour sometimes more water is needed.. The cooking time also increased, since i wanted it to be nice and soft.. Will be getting all ingredients and going to try this chicken seitan recipe! Love your chanel! 🥇Im vegetarian from South Africa..

    Thank you, I feel this simplified the process of seitan, every other recipe with the broth and vague instructions has not been as helpful. I also love that you used a stick blender and not an expensive blender. I cannot possibly afford expensive equipment, but I feel every other vegan channel I watch contain expensive equipment that’s puts me off from trying with my cheaper stuff. 🙂

    Rose, I agree with everything you've said. The other day I was determined to purchase a Kitchenaid stand mixer. Girl, really, it was 500 Euros! like 500 Euros? I can go to Paris with this money!     I made this Saitan recipe two days ago and although I messed up the seasoning a bit, it was so much better than anything you get on the market! I fought a long fight with myself if I should even try to make Saitan myself because every saitan product I tried so far was a disappointment.     I am in the same seitan group Lacey is in. Lacey from avocadosandales. There are a lot of seitan geniuses in the group, and there are a lot of experimenters as well. Someone in the group made Lacey’s recipe, and used titanium dioxide. That turned the seitan white so it looked more like chicken. Also, I don’t have elevated taste buds, but, when I used a particular vwg, the gluten taste was overwhelming, and I even used tablespoonfuls of vinegar,and I could still taste the gluten. So, I changed the vwg brand, and it made a world of difference.

    Yes, cooking with seitan is a whole lot of sorcery and chemistry, its my favorite food to make actually! I have used the white food coloring you've mentioned mixed with red and yellow to make fake lobster meat, it looked amazing! Perhaps I will post it here if you guys want it, I will be posting crab meat very soon!

    Thanks so much for developing this recipe to share with us! When you buy it ready made it's so expensive and you get such a little amount. I'll be making this soon. I also make my own mushroom powder, but I make it from any leftover uncooked mushrooms I have left over. I leave the mushrooms open in the fridge until they dehydrate and then I process them in the mini blender. Very cheap and easy to do. I put up a video on my channel about it.

    @@ChefJana 4th time of making & tweaking this recipe.... Added herbs, salt, sugar & pepper but thought I knew better and added besan/gram flour....I did *not* know better! It dries up the texture! No need for it! Thanks Jana! Really fantastic, simplistic recipe that folks can adapt to their taste! This one's being copied into the recipe book! Thanks again....     Hi there. I have made this recipe a number of times now, and it always has great texture and taste. It does, however, consistently turn out much deeper in color than yours, practically brown instead of tan. Any ideas why mine is turning out so dark?

    Yes and yes! You can spice it up to your taste, I sometimes add some MSG, nutritional yeast and dried thyme, its fantastic ;)

    je vais essayer votre recette j ai testé plusieurs recettes de seitan mais ca m avait pas trop plus mais la meilleure que j ai testé c'est celle ou on remplace les pois chiche par de la purée de pomme de terre avec vous tester ? elle est tres bien pour les plats en sauce comme le bourguignon! j aimerai savoir combien de temps faut il cuire le seitan a l instant pot ?merci

    Hi Jana, I tried this recipe but used hand kneading as my food processor only has one speed and I thought it would be to fast. As you can guess I got no strings. I would like to try again do you think I should knead in my processor even though I only have high speed? Also why do you make 2 parcels to steam instead of keeping dough together? Thanks

    Chef Jana, I’ve tried making wheat gluten chicken many many times. The texture never comes out anything other than a ball of dough. I use an instant pot on high for 2 hours. My uncooked dough looks plenty stringy and super sticky. Any advice on what I’m doing wrong?

    If you steam it in the Instant Pot, how long would you do it for? I imagine it would overcook, if you steam for the same amount.

    I made a batch of this! Best seitan ever I think...must be the chick peas!! I would however add more flavour as these were quite bland. Not sure..maybe more miso? Add some salt? some veg bouillon? I wonder if adding vegan chicken soup mix would help. Anyways....All of you, go try this, using the food processor was the TICKET and also the steaming, as I used to simmer in a broth. It shredded very well. When it was cool, thats what I did, shredded it all and then divided it into portions in baggies and froze it...Can't say enough about this!! Thank you Jana!!

    Yes, in my opinion, the mixture was supposed to be blend so you can add the kind of flavors you prefer when cooking with it. From my experience, adding salt sometimes made the end result a bit too salty especially of I make spicy and hot food such as tinga or Thai basil chicken, the hotness increases the salt in the food. It is always nice to keep in mind that, it is always easier to add salt other than removing it from a recipe. But if you want to add flavors and more salt to your seitan, just go for it! :) And I think the chicken soup base mix is a brilliant idea ;)

    Thanks for all the tips Jana! Can these be frozen? How long to steam in a pressure cooker u think? And would u make videos for big batch cooking of a few kinds of vegan meat (e.g. chicken/ sausage/ beef) for keeping in freezer/fridge as ingredient prep for meals? I'm interested in learning efficient time use. I usually spend Sunday prepping ingredients for meals of coming weekdays but have not tried making seitan/meats. Thanks!

    Yes, definitely can be frozen for up to 3,4 months, and up to 7 days in the fridge. I always make two or three batches then freeze it in smaller packages. :)
