    Looks great. I go one little step further and drop the steak into a pan quickly with butter, a little minced garlic and a sprig of rosemary. Just a 30 second pan finish after the sear (some people just baste it on quickly). Butter combines w the char and knocks you out with the flavor.

    For bigger stakes around 2 pounds, I just use a weed burner torch connected to my bigger propane tank, I put a cookie grate on top of a cast iron, and I let the stake get nice and charred

    Great video. Question: do you find that by using the torch to sear it you cut down on the smell in the kitchen? I currently sear in cast iron pan but the smell lingers in the kitchen (wife doesn't like)

    Our range good doesn't suck up much air (were renting or I'd replace it) so I bought an air purifier to run while we cook. I hope it helps our seasonal allergies, but we shall see. Even before the oil in a pan creates smoke, it releases carcinogens into the air. I am hoping the air purifier remedies that. We LOVE cooking.

    im not a fan of direct flames on the st eak like this, it burns more than it sears givning it a bitter taste. Add a fish meshed grate at the front to prevent direct flames shooting out and you give it loads of heat but not alot of flame

    130F is the internal temperature of a rare steak. How it gets to 130F is up to you.

    Save the vac seal stuff for fruits etc. Take the meat or poultry and season with a tad of olive oil, salt and pepper. Put it in a lage zip lock bag. Partially seal it. Put the bag in your preheated water bath. The water will displace the air in the bag, creating a tight fit. Finally, seal the remainder of the bag. And voila...

    Please redact blowing glass from the selling points of the torch... You need a much more focused flame to do so, and to simply claim that this torch is capable of such activities based on the thermal properties of its fuel is false advertising. Without an oxygen source to manipulate the characteristics of the flame, it cannot manipulate glass properly. Also, please ensure that you are thoroughly sanitising your food by making sure that it reaches a temp of 63c, or 145f.

    Carcinogens, yes. But, BBQs do that, too. No gas taste unless you hold the blue part of the flame on the meat. Even worse with butane.

    You are holding it too close you just need the tip of the flame otherwise it taste like propane blue flames equal propane flavor
