As a Greek I 100% approve This is literally what we call a “horiatikh” «χωριάτικη» but with pasta and a dressing Btw in that og salad we add oregano but I don’t think it’s going to suit the pasta very well so it’s better without

I never rinse pasta when making it normally because I want to keep all of those starches intact so the sauce will cling better.. HOWEVER.. I was always taught that rinsing it for pasta salad was important to (a) stop the cooking process so it doesnt get mushy (b) cool it down quickly and (c) take away some of the starches so the final product does not stick together!
