I’ve always been a fan of the spatchcock method for chicken and turkey. Dry brine in the fridge uncovered overnight for super crispy skin!

New to the Green Egg and just recently bought a rarely used XL. I broke it in my experience with your recipe today. Oh My Buddha ! Best chicken ever and I'm now weaponized with a great tool. 😀 I'm more a slow cook guy, but this was a good initiation. Going slow and haven't got my station developed yet. First order is to replace the gaskets. I'm happy with this tool. I'll probably do a few more practice birds in anticipation of Thanksgiving. This recipe is true to form, easy and it was a good succulent lemony treat. My learning curve just begun on the Green Egg.

Love it! Yeah, I'm a thigh guy myself, definitely the best part of the bird. Growing up, my mom made her "gypsy chicken" which had a ton of fresh garlic & lemon. That was roasted in the oven, but still excellent!

The only way I make chicken now is Spatchcock. Going to try this next time. I've always put butter under the skin and it really adds moisture. Normally do a montreal chicken seasoning, but looking forward to doing this. Thanks Ron.

Awesome!! Bravo! One question concerning the compound butter, Ron states 1-1/2 Tablespoons of pepper in the video, the recipe on the FOGO site states 1-1/2 teaspoons. Since it is lemon PEPPER I would think its Tablespoons but I thought I will ask. Thx! Doing this tonight!
