I've been to Buenos Aires, Argentina lived there for 3 months 12 years ago and was amazed from my first experience of this. After work I would walk to this steakhouse called "The Alliance" I remember it was served with my steak in a cute little dish with a very tiny spoon. I didn't even ask for it. I put it on my steak, siped some wine and took a bite. I was immediately intruiged about this chimichurri and the chef came out and wrote me the recipe. I took that recipe back home have made this before many of times and this is spot on ingredients. You can mix in other stuff like lemon juice or lime juice, even pineapple if you want but those are the base ingredients for it. It adds another dimension to your steak and the flavors going on in your mouth.

The best recipe so far! It was exactly perfect, I think the salt is what really makes it happen at the end. I do a heavy pinch of salt.

This recipe is amazing. I personally reduced the amount of wine instead of 250 ml to 175 ml

The olive oil was 250 ml. Red wine vinegar was only 1/2 cup (118 ml).

What happens if you add in (*gasp*) Cilantro to the mix?

It's a no-brainer. Cilantro only makes it better. It makes the flavor even brighter. I use about 50/50 cilantro/parsley. By itself, parsley has almost zero flavor so definitely use the cilantro which is an "HERB FROM GOD".

hey thank you for your question, honestly don´t feel much of a difference, it´s just the way we are used to do it :D

I think in general using a sharp knife and cutting up the herbs retains more freshness as you are not damaging/bruising it as it would be from the blades a processor. You end up with a courser more rustic style as opposed to a paste. Also any good chef/cook should practice knife skills. If you no time... blend it

Good recipe. You can use Apple cider vinegar too. And a bit of sugar. And more chilli to taste. What is 'Cilantro' ? that nasty stuff we call 'Coriander ' in England ?😕
