Today we are going to make caramel apples covered in chopped peanuts, one of my favorite childhood fall snacks but they are so much better homemade. I’ve screwed up caramel many times before but today I’m sharing a foolproof caramel recipe courtesy of Sally’s Baking Addiction’s (sallysbakingaddiction.com/hom...)

    My family owns an orchard in CT that used to make thousands of caramel apples every year. This looks like a great technique to me. Two changes I would suggest: putting the stick in the bottom of the apple helps it to stand more stable when done. And taking the dipped apple and immediately roll on its side in the peanuts and then stand it up on a bed of peanuts to coat the bottom. Any delay cools the caramel and prevents the nuts from sticking. Other popular versions we used to make: caramel with crushed toffee on the outside instead of peanuts, and red cinnamon candy coating with shaved coconut topping.

    I used to work at a theme park and I learned to make caramel and fudge dipped apples. First we would check the apples for bruises, take the sticker off, de-stem them and soak them in hot water to remove the carnauba wax, sometimes soak them twice because it had a very thick layer and if the wax wasn’t properly washed off then the caramel and fudge would slide right off. I found out that the wax was only to make the apple shiny and appetizing, not for any other reason.

    Be sure to temper your chocolate. Hold back 60% of you chocolate and heat and melt in stages. It will have a glossy finish and be much smoother.

    Oh and parchment paper is VITAL to use when dealing with caramel and chocolate. You will end up with a disaster otherwise.

    A side note on the candy theme...as I was making a large batch of hummingbird water I got distracted and let the water boil down to a brown goo. I was determined to not let all that sugar go to waist so I added a can of peanuts and poured it out on a cookie sheet. Best peanut brittle I ever had, a little burnt taste ( I like that) a nd very crunchy

    Awesome video. Never knew the exact caramel levels by temp. I have made my caramel with condensed milk instead of cream. Could be worth a try - really would be ideal for this recipe. Also TEMPER (melt in stages) your chocolate - so you get that glossy smooth finish. Enjoy!

    I prefer my caramel apples to be plain. Just the tart apple and the sweet caramel. Nothing to disrupt the flavor and texture combo.

    I need to try eating and making Caramel Apples, thanks for sharing this video 👍. In New Zealand we eat Toffee Apples (which I am an absolute pro at making) which is a Granny Smith apple and covered in a hard clear toffee and then we add red food colouring. This is a childhood treat but you only get this from school fairs, cake stall (bake sale) or local festivals. And just as a hack I use disposable chop sticks (one stick only) as I find this is sturdier than the kebab skewer. Always love your videos Stephen 👍

    Oh wow! The fact you haven’t had a caramel apple for real yet is insane. Just my suggestion (and mine is one of a very popular opinion) - don’t put on the nuts like he does in this video. It is way better without them!

    @@zAsKaA That is a damn shame! I hope that you make this. Just a tip, but it really doesn’t taste as good with all the nuts on it. Try it without nuts first is my suggestion, from someone who absolutely loves caramel apples! :)

    If you have a hard time finding the sticks I find that chopsticks from a fast food Chinese restaurant work great. They are also a little more substantial so they don’t bend that’s easy

    OMG I must try this!! You said payday, I saw in your cherry tomato weekday sauce or the spicy weekday sauce with your 2 friends you did the podcast with, you had candy corn in background. Have you tried the payday snack of dry roasted peanuts and candy corn? That also tastes like a payday! I'm gonna try those bars with my extra caramel, maybe if successful, I will sell at farmers market along with my other goodies!!! Also, friend and I discussing food truck, so about to binge your food truck videos! We are in smaller, rural town and thinking of a "Walking Taco" truck!     Interesting. I use joy of baking technique for making caramel. It's slightly different. The caramel tastes good with sweet potatoes. It also is good with pork. Experiment. Also use sea salt in the caramel.

    I asked myself that question too. Understanding why the Apple needs to be a bit sour to make Caramel Apple .. It’s all about contrast . Sweet & a bit sour. Some people like that , other do not. It’s a preference..

    @@truenorth2653 It sounds like you have done this before? I do not have a “candy thermometer” like what was mentioned here in this video to use. I only have a thermometer that is the kind that you would stick into meat, even though I’m a vegetarian lol. Is there an actual difference between a “candy thermometer,“ and the kind of thermometer that I have? The kind that I have goes up to 392°F. That would do the trick, no? I’ve always wondered what a “candy thermometer“ is… Does it merely mean that it goes up to a very high temperature that surpasses what my thermometer can do? The only time I have ever made caramel for caramel apples is by taking all of the wrappers off of caramels that I buy in the store, and I would like to do it the way that it is done in this video, but I hope that I wouldn’t have to buy another thermometer to do it lol.

    @@anti-ethniccleansing465 a "candy thermometer" just has the temperature range for the different sugar stages marked, so you don't have to remember them / look up every time you'll make some sort of cooked sugar... It's pretty much a regular cooking / imersion thermometer otherwise (most people actually use them more for oil temperatures than sugar). It MAY get to higher temperatures than a meat thermometer (that you'll only ever want to cook to 160-ish), but if yours go to 392F it should be fine

    Is there a difference between a “candy thermometer“ and a normal thermometer that you would use to stick into meat and other things? Do I seriously have to buy a special thermometer to make this? My thermometer goes up to 392°F, so there shouldn’t be a problem, no?
