My husband made this for me for Mother's Day. It's fantastic. It's creamy and not too sweet. The topping is crunchy and nutty delicious. Serve it with extra fresh berries.

Oh how I love Lemon Ice Box pie. This berry pie sounds and looks delicious.

This is my favorite type of dessert- creamy and light with a great crust with a hint of nuts. Excited to try this!

I made this with blueberries and it was fresh, rich and delicious. The reserved juice was a real plus and so were the Biscoff cookies.. The pie was eaten in two days...there are only two of us 😉

Yup. This one is going to the list of things I need to make! Normally I need chocolate, but every once in a while i see something like this that makes me drool

Put your lemons, or limes, in the microwave for about 20-30 seconds and the extra juice you get is amazing.

John! I FINALLY have been able to get my hands on a copy of your book (through my local library... I was over #50 in line for it that's how popular it is here, not to mention the long queue for the ebook version). I've really enjoyed sitting down with it and reading everything, not just the recipes, but all of the life stuff as well. I really mean it when I say that you've inspired me in a lot of ways, particularly in finding joy and love within cooking, and knowing when you've hit that point in life when you need to make a change. Your takes are so refreshing, and your recipes are always so carefully crafted, innovative, and meticulous (I get it, I'm also a Virgo haha). Thank you so much for sharing this journey with us, it has really inspired me both in the kitchen and beyond! I made the grilled chicken with peach barbecue sauce, and the pappardelle as well to go with it, and it was a huge hit! I'll be making the passion fruit millefeuille today, and lord knows I'll be making as many of the recipes as I can before I have to return the book, in which case I'll definitely have to purchase a copy for myself!

I apologize right now but this is going to be long! OMG!!!! This pie is right up my alley! My family’s favorite pies are my baked Bramble Berry pies. I make them with fresh raspberries and blackberries. I often also add strawberries and peaches and/or whatever else is in season. In the fall I like to make my multi fruit pies with apples with crushed walnut (or pecan) crust. I prefer shortbread cookie crust to graham cracker crusts. But I never have made or eaten an ice box version and I was drooling over yours. And I just found this in your cookbook!! Yaaaay! My jaw dropped when you pulled out the Lotus Biscoff cookies!!! They are my favorite European biscuit/ cookie 😁I discovered them on my most recent visit with my son in Germany last summer. Did you know they make a creamy spread of them too? And I was thrilled when I found these here in the states! The thought of using them as a pie crust until today. So thank you so much for this post!! Come to PA, I’ll make you a pie. Lol. ❤

It was a delicious pie, enjoyed making it! Just an extra hint-that wasn’t clear to me-leave plenty of time to defrost it prior to serving. I took mine out to serve when I made the final whipping cream topping not thinking the pie would be rock solid. Give yourself at least an hour to defrost before serving.

I will definitely going to make this but will add a graham layer in between.

What a perfect spring treat. Berry Icebox Pie Yum! *If you don't have a micro-plane for zesting don't fret. I use a peeler making sure to leave as much of the white rind behind, & then mince the peeled zest with a knife. Works marvelously!

@@PreppyKitchen well it’s in the freezer now, so let’s hope it’s ready for dessert!! One thing I noticed (for those who don’t have food processors) if you smash the almonds in a bag first then just fold them in it still works pretty well! All different sizes! The cookies I used my tiny food processor but that would have obliterated the almonds. I used arrowroot cookies so I’ll tell ya how those worked out! We’re doing Mother’s Day dinner tonight as my mom works this weekend, and they’re her favourite cookie!

I can binge watch your videos. You're so fun to watch, and I will be purchasing your book. I have a question if you don't mind. My mother has a citrus and peanut allergy. Not adding nuts is easy but what can I substitute lemon/orange juice/zest in some of these recipes and not lose too much of the flavour? Thanks in advance.
