Carmy's timeline: 1) The French Laundry (California) 2) Ever (Chicago) - Chef Terry's restaurant 3) Noma (Copenhagen) 4) Christmas dinner from hell 5) Daniel (NYC) - where he studied under French chef Daniel Boulud, the real owner of Daniel who played himself in the episode 6) Eleven Madison Park (NYC) - it's never explicitly stated that this is where Joel McHale's character was the executive chef, but EMP is mentioned frequently on the show, and when Sydney first meets Carmy, she says that he was the most excellent CDC at the most excellent restaurant in the entire United States of America - EMP was named world's best restaurant in 2017. 7) Mikey's suicide 8) Carm takes over The Beef Roughly four years pass between Carmy leaving for NYC, which presumably happened shortly after the Christmas dinner, and Mikey's suicide. I don't know if the dinner itself was the very last time Carmy saw Michael, but if not, it wasn't too long after that. It's clear that Mikey's descent into addiction and depression was already well underway during the Christmas dinner, but he didn't actually take his own life for another 4 years after that. It is inferred that Carmy and Mikey stopped communicating at some point after Carmy left for NYC, and they hadn't talked in some time when Mikey killed himself. I also just picked up on an odd coincidence in the timeline - Carmy plated the dish for Sydney (the best meal she ever had) on the very same day that he got the call from Nat that Mikey had committed suicide. The scene with Sydney getting the dish was filmed at The Exchange in Chicago, which I think is supposed to be a stand-in for EMP in New York City.

Matty has been EP from the start. He and Chef Courtney “Coco” Storer are the culinary producers also. In charge of all the food presented on the show with a team of chefs. He's had her on his youtube show a few times. They are hilarious together. Not surprising they'd work together on a project like this. Oh Courtney's brother Christopher Storer is the creator of the show and his and Courtney's experiences are inspirations behind a lot of it.
