The Art of Making Freekeh: A Traditional Green Wheat Delicacy

Ойын-сауық

This video delves into the traditional process of making Freekeh, a Middle Eastern delicacy, by harvesting green wheat, then roasting it to halt the enzymatic process and infuse a smoky flavor. It emphasizes the importance of timing in the harvest to ensure the wheat is at the perfect stage for Freekeh, highlighting the technique's ability to preserve the grain's nutritional value and impart a unique taste.
Freekeh is a middle-eastern dish made from immature (green) wheat whose natural development is permanently arrested by a roasting process in the field.

Can you do an episode on grinding and baking it. From field to the table? That would be awesome!!

Frikeh is traditionally used as a whole grain in salads - much as you might use bulgur or quinoa. I don't know anyone who uses it in baking. I just added links to 2 recipes from chef Linda Cowell to the description box above - hopefully you'll have a chance to try them someday. As for following a bread wheat from grinding to baking - I will look into it. =)

Freekeh making processes in the Middle East involves laying the wheat in the sun for about 2 days to dry before torching the green wheat , this is what I gathered from the Arabic KZreads that I've seen . Where can I purchase this product ? I was not able to find it on the internet .

Isn't charring the grain on galvanized sheets likely to leave zinc and magnesium oxides on the grain?
