The Art of making Burek
The tradition of Burek dates back 5 centuries, and the recipe has stayed unchanged since the beginning. The recipe is very simple, all we need is Flour, Water, Salt and Oil.
Burek was founded in Turkey and then transferred over to Macedonia, more specifically in the Balkans. Burek has been part of our traditional and authentic kitchen in Macedonia, Serbia, Croatia, Bosnia, Montenegro and Slovenia.
My passion for Burek started over 10 years ago, I started working in my father’s bakery as a 16 year old teenager.
There are three parts in the Burek making process.
First part is: mixing the flour and water until you get the ideal texture of the dough, the temperature plays a big part in getting the dough just right. If the humidity is higher you need less water, if the humidity is lower you need more water, there isn’t an exact recipe that we follow, everything is based on feel. My father would always say “You’ll feel the weather and you’ll mix the dough”.
The target in second part is to get the structure of the Burek just right and to strengthen the elasticity. The shaping of the dough balls ideally needs to be smooth.
In between parts 2 and 3 the dough needs to stay in butter overnight for approximately 6-8 hours.
Last part is the last and most important. Getting a rhythm and being consistent is crucial, at this point, the dough is very gentle and elastic that even a little bit of carelessness could cause the dough to break.
From the very beginning I developed an appreciation for the process of Burek making, it doesn’t feel like work when you have a genuine love for what you do. To become a master of Burek it takes years of experience.
My goal for Burek is to be one day globally recognised.

    Part of my childhood in NSW. After 33 years if begging I recently learned from a master. I have the technique, now to master that feel!!!!! My dough is still too tough 🤔 I'm determined to nail it though! Bravo for sharing your love of burek 💗💗💗

    This video is not about countries. Burek is part of the culinary staples of ALL the Balkans countries as well as Asia Minor and the Middle East. A delicious influence from the Ottoman Empire which ruled over the Balkans for centuries.

    @@mellake7052 I’m so glad u came to explain this to me. I was born and raised there. For past 8 years I travel in balkans every year and try a new country. I’m an American citizen for past 28 years now. But I give credit when credit is due! Burke in Albania by far was the best yet!!!

    Correction~ Burek wasn’t given by turkey it was created by Bulgaria. Original name of burek is - banitsa. Apart from that good video😊

    You have really bad knowledge about Burek. The burek is not Coming from Turkey. 5 centuries the Turkish empire took the Balkan unter their properties and the hold them long time. Bulgaria is the country of Burek und the name ist Banitsa, our cheese and our Joghurt! Turkey doesn’t have Jogurt as well! All the world know the Joghurt is Bulgarian, and the Bulgarian cheese is made with the same Bakterie! Banitsa is Bulgarian traditional meal since 600-800 year, Turkey found it in 1300-1400 year, that’s why behind us!
