Thanksgiving Turkey on the JoeTisserie Basket Kit
Ingredients
9 ½ Pound Turkey Breast, Bone On (Spatchcocked)
1 Tablespoon Lanes BBQ Brisket
1 Tablespoon Lanes BBQ Honey Sriracha
2 Tablespoons Butter, Unsalted (room temp)
4 Sprigs Thyme, Fresh
2 Sprigs Rosemary, Fresh
4 Leaves Sage, Fresh
1 Chunk Hickory
3 Each Carrots, Med to Large Dice
2 Each Onions, Yellow Med to Large Dice
4 Ribs Celery, Med to Large Dice
Method:
1. Stabilize your grill a 325F. For this cook, you want to bank all the coals to the back and allot the ceramic to absorb some of the heat and energy before installing the basket with the bird. I like to use the heat of a dying fire for these cooks’ vs a fresh rising flame.
2. While your grill is coming to temperature, Spatchcock the bone on turkey breast Use the method in the video to cut out the backbone or use kitchen shears to cut it out if you are more conferrable. Hit the keel bone with the knife and press down on the breast meat to ensure the breast is flattened.
3. Using your hands create pockets between the skin and the breast meat. Stuff some room temperature butter under the skin. Season all sides of the bird with the brisket seasoning then follow with the honey Sriracha seasoning. Be sure to season under the skin and sneak in rosemary, sage, and thyme.
4. Choose your basket setup. I used 1 flat side and 1 curved side. Secure the turkey breast in the basket. Plunge the wood chunk in the hottest portion of the coals, then install the basket, start the motor, and close the dome and have the draft door almost completely closed and Kontrol Tower open ¼ to ½ way.
5. Roughly 35 to 40 minutes into the cook take basket out, open it and add your chopped vegetables and give them a bit of seasoning. (Continue to dry baste with the Honey Sriracha Seasoning)
6. Pull the breast when it reaches 160 to 165. At this point the vegetables should be soft. Allow the turkey to rest for 15 minutes. Pile the vegetables on your presentation plate, slice the turkey and transfer it on top of the vegetables. Please Enjoy!

    I think the rain just gives a double wash to the vegetables. A natural way of cleaning them :)

    The JoeTisserie is one of my favorite KJ accessories. I am going to get one of these as soon as I can. I can't deny it. I am a Kamado Joe fanboy. I even bought a KJ hat and wear it all the time. The quality and the variety of useful accessories make it a lifelong purchase for lifelong enjoyment. I am sure they will come out with even more cool accessories in the future. And they have the best celebrity chef/rep of any vendor.

    Looks great! Also liked your hidden " yes I change my gloves" camera work :) . Did see a potential option to leave the flat basket in, put veggies on top and then close that second chamber off with the other concave basket??? Thanks for the video.

    Looks wonderful! I love your videos. Question on adding lump during the cook. Do you worry about “bad” blue smoke from fresh lump? Do you have to wait for it to clear?

    I usually do a whole bird on the Kamado Joe and mom bakes one in the oven for Thanksgiving. This year due to cost and availability I'm just doing a breast like this and was totally thinking about the Joetisserie.

    there are thumb screws on each end of the main basket but they are not used in the video. what are they for?

    @jpyornoc the screws are only used if you sticking a spot rod through instead of using the basket. I think this is a quality piece of equipment.😊

    Im not sure how much salt is in your siracha rub, but it sure seems like it would be a salt bomb, with how liberally you applied it

    Not much salt at all. That’s why I like a lot of lanes rubs, they are not your typical over salted rubs. Ingredients are labeled by volume, generally speaking l, avoid rubs with salt at the beginning… unless it’s a SPG or similar All the best E
