Texas Style Brisket wrapped vs unwrapped

Smoked two Briskets for some friends and family and ran into a crunch. Both briskets were bigger than the normal size Ive done in the past. One was about 16 pounds and the other was a whopping 18+ pounds of just good’oll Texas size meat. So I wrapped one in aluminum cause I was crunch for time. However the bigger brisket I left unwrapped and it took 21 hours to fully cook and man was it worth it.     You did an excellent job on both, they look tasty. But slicing against the grain would've made it taste even more moist

    Any idea on why some of my smoke rings are dark and some are bright red? I'm not sure if it has to do with the wood i'm using or the amount of smoke or both. I usually have clean and steady blue /see through smoke, not heavy dirty smoke pouring through

    Not sure. I do know that the quality of salt and other products will affect the smoke ring. Ive use kosher salt from Costco and it produces a smoke ring but not as pronounced as when i use the Kosher salt from my copacker in my JPAP. Good question and appreciate you watching.

    Some people use celery salt and that also helps

    Nice video. How does a brisket cooked on the Masterbilt compare to one cooked recipe on a WSM?

    Never done a brisket in the WSM. The one I have is the 18.5 inch model and don't think it would fit. But nothing beats the flavor of a real wood fire. Plus a real wood fire will give you that famous smoke ring that you can't get in the Masterbuilt. Don't get me wrong Materbuilts are great and I have two of them and done a lot of fantastic food in them but for a brisket its gotta be a real wood fire in an offset for the ultimate taste. thanks again for watching and commenting.

    That looks great, I'm game to try the unwrapped brisket. My Masterbuilt is only a 30" and I may have to cut a big brisket in half. Do you think it should still take 21 hrs or just keep an eye on the temp to make sure it comes up to ~200 degrees (F)?

    Thank you for commenting on my video. Yes you can’t go wrong with cooking to temperature. 195 is good and I’ve even gone as high as 210. Just make sure you let the brisket rest for at least an hour before serving.

    Great looking briskets. Nice to see the end result this time 😜 I’m sure by now you’ve learned that butcher paper is better than foil for brisket because it preserves the bark a little better. How do you like the pellet smoker now that you have the LSG? Still use it?

    Thanks Apex appreciate that. Yes butcher paper is great. Don’t use it that much cause I’m always scared I won’t be able to push through the stall. Maybe I just need more practice with it. I don’t have the pellet smoker, sold it to a restaurant out in Lake County. But the LSG is far superior. Thanks again for watching and commenting.
