Finally, the famous Meat Church Texas Chili recipe! This hearty, meaty chili will fill up the hungriest of appetites. This recipe makes a big ole batch. We are going with 4 lbs of meat! 3 lbs of ground meat and 1 lb of chuck roast (smoked). I recommend 2 lbs of hamburger meat, 1 lb of of hot pork breakfast sausage. I love it with venison instead of beef as well. Any combo of meats works but having plenty of ground meat plus some large chunky meat that will break down and get super tender during a 6-8 hour cook is the best. HEARTY!
This recipe will require a large dutch oven or slow cooker. We use a 7 QT Lodge Dutch oven in this video.
This recipe It has a medium spiciness level. You can adjust that by adding more or less chili seasoning.
Beans or No Beans?

Bought a 7 quart Lodge Dutch oven like Matt used and made a batch of Texas exactly as shown for the boys at deer camp and it was a huge success. I then made it in a neighborhood chili cook off and took 1st place out of 25 with it. Great recipe and cooking in a Dutch oven makes a huge difference in simmering all day without scorching the bottom. Thanks Matt!

that's how I do mine. I wouldn't do it without it. It lets the seasonings really set into the chuck roast. @@christopherc4814

Did you use their seasoning? I was about to order some but it's gonna cost $8 just to ship. Didn't think shipping cost would be that much.

I did use there seasoning. It was very good but I have made chili using my own reciepe before which is just as good. So it's your choice. The big difference for me was I never made chili with big chunks of meat, this was very good instead of using ground up meat.@@ledsabbath1086

Just won a chili cook-off with this recipe! Only variation was I used rotel instead of diced tomatoes and I smoked the chuck roast over the pot of everything else to catch drippings. Let it sit a day in fridge and cooked an additional 6 hrs in crock pot before judging. Thank you for the delicious recipe!

I got mine in the dutch oven and ready to put on for Sunday dinner. Looks so good.
That beer pour was a straight up boss move. It was a show of dominance over the chili.

I waited until he circular filed the beans saying "this is Texas" to hit like... leave the beans out of chili or leave on table as condiments for those that can't appreciate real chili... also beans in chili fall apart and don't permit you to freeze any leftovers properly.

I've watched this video probably ten 10 times this in the last week. I'm going to make this chili for a college football party on Saturday (Go Bucks!). Can't wait to make it! Smoking the chuck roast (seasoned with Holy Cow) tomorrow. I already know this is going to be a hit! I love the recipes from scratch, but also appreciate the easy recipes like this. I made this last Sunday, we love it but it was pretty hot. I used 5tbspns of the meat church chili seasoning. Did you go to 6? Does any heat come from the chipotle peppers? Thanks!

@@mahmer09 I have made it four times now and have settled on 1 tbs per pound of meat. I liked the heat but it was a bit much for my wife and daughter.
Meat Church is 🔥. Been buying seasonings and apparel for last year and am never disappointed. Keep up great work. Hope to visit your shop in Texas someday.

I love this recipe! I’ve done it twice. I use a good flat iron steak for it. Also add two tablespoons of sugar to cut down the acidity. But damn it’s delicious!!

We absolutely loved this recipe. We added beans to ours which I know is a sin in Texas but we like the added texture. Seasoning was absolutely perfect. This is our go to chili now.

Dont know why people say we dont eat beans in chili. Im 48 born and raised in san antonio and we always had beans in our chili. I think thats just a white people thing

@@johnnysimpkins1655Bingo! Beans are a staple in Mexico. I mean, that's where they grow. The original chili queens in San Antonio (who came from Mexico) served everything that they made with beans. It's white people who decided that chili con carne should be treated as a stand-alone dish that doesn't have beans anywhere near it.

I have Christmas party at work and I’m trying to make this that looked amazing
I made this chili last night for a church cookoff and won first place of 20 people! So many people said they loved the chuck and that it has a little kick to it. Will be making this again. P.S. the chili seasoning didn’t arrive in time so I just made a Texas chili seasoning with ingredients I had at home.

Made your chili for the first time Christmas eve! By far the best chili i've ever had, let alone made! Doing a Brisket this weekend and I'll be saving 2lb of flat from that to do it again. Can't get enough!

I'm born and raised in Dallas, and that is A-1 Texas chili! I make a mean chili myself, using a beef/buffalo mix, but I gotta try it with cubed steak or roast.
It's so great that your Rubs are sold at Ace Westlake! Just picked up the Chili Seasoning and some more rubs. Got talking to the manager , he said folk are always asking about MeatChurch and he was going to try the Chili Seasoning also. I told him to catch your KZread video before starting out. Amazing looking chili. Everything Matt cooks looks amazing, and this recipe definitely goes into the "must try" column. Luckily, the local butcher carries Meat Church products, so I can get my hands on some of that chili seasoning.

I'm from Michigan and in about the last hour of cooking chilly like that I always add one or two cans of beans. It's not a lot of beads for a huge batch of chili but I like a little bit of beans in my chili

I make a similar chili but mix my own spices. I use about 20lb of trimmed brisket that I grind through a chili plate and 5 lb of smoked brisket flat. Makes about 5 gallons.... Will have to try out the Meat Church seasoning blend!

That is one fine looking chili! Being from Mississippi, we typically add the beans, but hey, I would gladly swap out beans for chunks of smoked brisket or chuck!

I am in Alabama and my parents always made it with the beans added. That's just the way I learned but I don't ever do kidney beans, it has to be pintos or small red beans. I think it breaks up the monotony of meat, meat, meat. And yes on the bell pepper, I have always added this if only for the extra color. I do love the recipe and have printed it out to cook ASAP. But I like mine with this Wagyu from Kentucky. I will say if you use their regular ground meat then you need to drain it or skim it as it cooks, both work well but I drain mine. The thing is that it's about 70/30 instead of 80/20. I have bought from these folks for the last two years, spectacular meat all around www.blackhawkmeats.com/shop

In Texas there is no beans in chili. If it has beans it may be good but it’s not chili anymore.

While travelling south for a few days break with my family last week we stopped at a roadside bakery/pie shop and they stocked all your rubs!! my man! Chipotles in adobo is my secret weapon. Won my wife's office chili cookoff last year. Nearly 100 entries. Your chili looks far superior. Gonna blow them chumps out of the water this year.

I like to get about 2-3 pounds of dried guajillo peppers, remove the seeds, rehydrate them in a pot of boiling water, purée them, and strain through a colander to remove the skin and any seeds. I use the purée for the base of the chili and to minimize the tomatoes. I’ll use chuck roast, brisket, or just about any big chunk of beef and have been known to add chunks of pork tenderloin or venison tenderloin. I usually smoke the meat first as it adds that extra special flavor. The guajillo peppers are a great base but onions, garlic, salt, pepper, cumin, and such are still needed. This chili dethroned a nine time champion where my wife worked and won three out of the five years she worked there. Darlington, South Carolina
