As a midwestern American i gotta say you were missing jalapenos, lime, and chipotle seasoning. When i do fajitas they are on the stove top, not in the oven, with neutral or olive oil yellow onion, a couple bell peppers, jalapeno, garlic and the meat cut into bite sized pieces (be it chicken, pork or steak) the veggies cooked together first for a little bit with salt, pepper, cumin, smoked paprika and chipotle powder, then the sliced meat (seasoned the same before hand) thrown in and simmered with a splash of Mezcal til cooked through. The tortillas need to be heated over the stove til pliable then hit with fresh avocado or fresh guacamole, and sour cream then serve the fajitas over that and hit with a squeeze of fresh lime. Cheese is optional, either chihuahua if you wanna be authentic or a mexican cheese blend from the market. Typically salsa and queso are served with chips, along with refried beans and rice or elotes

Midwestern? That sounds good, but southwestern. Chef did put something on those fajitas, assuming it was creme, bit it isnt listed. You use actual sour cream ? Thanks for the recipe/ingredients. I will try it.

As a full fledged fajita eater, this looks like a super quick way to make fajitas without busting’ out the grill.

Love it! while Babe knows exactly what she wants, Basic Mitch is the average person. "What do you want for dinner?" "I dunno, we haven't had chicken for a bit." And then Andy takes that ingredient and shows us a fairly easy recipe and method to make a delicious meal. (The recipe is in the description, of course.) so next time I'm trying to figure out what's for dinner and someone says "chicken", I have this new fajita recipe to try. Thanks a bunch Andy!

I gotta say I really enjoy the Basic Mitch dishes. They feel approachable to the rest of us. 😂

I am not sure I'd call that a fajita so much as maybe a burrito with fajita style filling, but it sure looks tasty!

You should do an opposite day version of this where you get to bark out meal ideas to Mitch and he has to cook for you. He could even have a catchphrase when you try the food, something like "And your tastebuds just got Mitch Slapped!"

It turned out SOOOOOOOOO good. The tomato salsa is alarmingly delicious. Who knew that some Salt, coriander, and chili flakes could convert a can of tomatoes. I'm in heaven with this recipe

I love how excited Andy gets when Babe tells him what to cook and how unenthused he seems when given something basic by Mitch (but deep down inside I think he really enjoys the variety of challenges each throw his way). If nothing else, chef Andy is versatile! There’s no dish he can’t cook.

Haven't recently started a commerical cookery course as part of my apprenticeship i appreciated seeing you use a Trivet to elevate your chicken which is something we did in class last week

If Andy ever gives 'Basic Mitch' a pumpkin spice latte, I'd probably die... and if Mitch was wearing Uggs, it'd be all over.

Fajitas are usually made in cast iron, on the stove, and almost no garlic(I prefer no garlic-it’s too sweet of a spice IMO for fajitas). I make mine with a bit of oil, then onions in the pan first. Brown those, add bell peppers, then the meat. When it’s jjuuuust about done (I like my peppers almost disintegrated LOL) I’ll turn the heat up and move the meat and veg to the outside of the pan, and add cut up Roma tomatoes so they sear quick with just a touch of char on the skin. Seasonings are usually salt, pepper, chili powder, some times chili flakes, cumin is recommended in some recipes but I don’t like it lol.

This is not fajitas, They look kinda tasty but this is more of a burrito with limited toppings. You should find a proper recipe as the real thing cant be beat!

💯 love the sheet pan fajitas!!! Great idea. Not so sure what that sauce is, lol, "modified Tex Mex?" Pico de gallo and guacamole must go on mine, and sour cream. Maybe a spicy blended cooked green or red sauce. But bomb fajitas! ❤

Actually, the final form is what we'd normally call a "burrito". Fajitas are usually put together at the table in tortillas and eaten a tacos.
