Nah, it's just nbt. Binary data. And it can't be viewed in notepad like other binary things(images, videos, etc). It is simpler and faster to store nbt in binary, than convert it to something human-readable like JSON and vice-versa every time

I screenshoted 9:24 and put it into CapCut then put the brightness up and it showed a purple iron golem looking head

The shadow things are just entity.null like a placeholder because well pigs, cows don't spawn in the "nether". But when they do spawn they are converted to entity.null because Minecraft doesn't know how to react
