TEDxAustin - Rip Esselstyn - 02/20/10

Rip Esselstyn is an Austin firefighter who transformed the health and wellness of the entire Austin Fire Department through his Engine2Diet program, which is now outlined in a book of the same name. A vocal proponent of a "Plant Strong" approach to eating, Rip illustrates how we all can benefit from taking a closer look at what's on our plates. www.theengine2diet.com

I used to bodybuild, exercised every day, had low cholesterol, low bodyfat. Ate lots of lean meat, eggwhites, nonfat dairy. Had a big M.I. in 2007 at age 44; cancer in 2010. Docs told me that I should get used to the idea of permanent disability at the end of January 2012 -- 40% loss of cardiac function, muscle mass on decline. I was a wreck. 'Til I read the China Study, went plantstrong. Now there's no evidence of heart disease or cancer. Off statins & most meds now. I have my life back.

Hilldweller Aren't we lucky to have this information? I ate lots of lean meats and dairy too thinking I was safe eating lean meat. Luckily I switched to eating plants at age 23. I was developing varicose veins which are a precursor to cvd. They are disappearing now.

I do not and have not eaten the SAD because my dad died of colon cancer in 1988; when he was diagnosed in 1986, his doc told all of us 5 kids to STOP eating red meat and all processed meat (like lunchmeat) and to "crowd your plate with vegetables"...and I took it to heart. At 55, my carotid scan was 100% clean green and my lipid numbers are quite stellar (LDL is 67...hoping it goes even lower)...go Rip, you are helping people change their lives and health!

I was one of those people who swore I was never going to give up non-veg (meat, chicken, seafood--omg, I love crab legs and shrimp!). Then I got cancer. No high risk behavior. Never smoked. No family history of cancer. I swam 3-4 times a week (about 500 - 600 meters/day). So I started looking into food as the cause. I've gone to whole foods, plant based diet for the past two weeks. Because I will do whatever it takes so that I never have to go through radiation and chemo again. But you know what? If you don't believe meat and dairy contribute to your health problems (if you have health problems), then keep doing what you're doing. You're only hurting yourself. But if you're smart, at the very least, you'll try to disprove this. Go ahead and measure your numbers (cholesterol, blood pressure, blood sugar etc), do this for a month (don't cheat) and measure your numbers again. See for yourself. Then at the very least, you'll be able to say "this changed my life" or "this is a bunch of crock--I tried it and it doesn't work". What have you got to lose? But make sure it's a whole foods, plant based diet as recommended in "Forks Over Knives" and not chock full of processed vegan alternatives...

excuse me, the china report is very well researched. it researches a lot of items which are peer reviewed. your simple analogy: (no meat = still lots of stomach cancer) is just a small part of the whole picture. cancer can be caused by many reasons. if you read the study carefully, you will find that stomach cancer occurs in regions where a lot of spicy foods are eaten or where damaging enironmental or poor hygiene circumctances etc. are. nutrition is not that simple.

My previous comment on stomach cancer was only in relation to the previous poster. You also admitted that cancer was also related to other variables. Yet the report you say is very well researched, says that: "casein, and very likely all animal proteins, may be the most relevant cancer-causing substances that we consume."

is it ironic that his name is RIP? lol Vegetarian & major advocate of the plant based diet here but gotta disagree about eggs and fish (especially eggs which are packed with so many things, afterall they are the precursor to life!). The best sources of vitD3 are oil based from fish or eggs, vegan alternatives are in dry form and like this will pass through the digestive system unabsorbed. The other problem is d3 alone needs to be taken with k2 to help properly distribute calcium into the bones and not the arteries/kidneys and k2 is only in saturated animal fats like butter, cheeses, milk, animal fats etc. Note that it's important if you eat eggs you're eating them poached, soft boiled with a runny yolk or lightly scrambled in butter (if they sizzle they're overcooked)

Cholesterol is not an essential nutrient, your body makes it. Essential amino acids (protein) can be consumed from plant and animal sources, but it's a lot easier to ge these from low fat dairy and lean meat. Just doing that should lower your cholesterol enough to eliminate that risk factor for heart disease.

The China study is not solid science. You compare the data within the counties of China and discover that the ones that ate the least animal protein if at all had higher incidences of cancer than the ones that ate meat. Also, China still has high rates of stomach cancer, one of the highest in the world, and they eat more plant based stuff than we do. While I'm not pro-carnivore and agree that we should eat way more vegetables than we do and far less meat, you can see conflict of interest here.

I'm all in support of eating whole foods, eating more non-starchy vegetables, and exercising. However, good quality meat is not junk food. I can respect people choosing not to eat meat but opinion that all meat is inherently unhealthy does not make it fact. The problem is that Americans, and more and more people around the world, are eating non-food items...sodas with HFCS, vegetable oils (even recommended by the government), lots of sugar in low-fat products, etc. Of course, a vegan diet is far healthier than SAD, and probably can be very healthy if properly planned. That being said, eating some grass-fed or pastured meat is not unhealthy. There are many populations around the world who eat a animal based diet and do very well. I follow LCHF and have never been healthier. I'm not against all carbs but I believe that a large majority of Americans are so insulin resistant that even "healthy" carbs can pose a problem. The idea of a low carb diet has a lot of research behind it. One can follow LCHF and be a vegan, vegetarian, or ominvore. I understand where Rip is coming from, even if don't agree entirely with his conclusion.

Leave it to vegans to bungle dietary guidelines and actual science in the worst way possible

You make a lot of good points but you go to extremism. Animal protein, dietary cholesterol and saturated fat are essential parts of the human diet. You need to look at where the majority of animal products come from. There is a major difference between a Mcdonalds burger and a steak from the butcher done on your barbecue. Many cultures eat meat and are pretty much disease free. I agree with putting the emphasis on plants and starches but do not eliminate meat entirely that is just extremism

While its way better then the SAD diet, healthy meats/eggs/dairy are great. Still argueing againts Cholesterol? Really? Even Ancel Keys says that dietery cholesterol has no effect on blood cholesterol levels, and cholesterol is essential. Cholesterol dropped to 118, 95? Thats very unhealthy and low

I agree. I respect the vegan movement from an ethical perspective but there is nothing wrong with saturated fat or cholesterol. Meat is not what is killing Americans...that's pretty obvious.

Processed foods make people fat... meat is promoting diseases with heavy amounts of protein-animal protein. You're stupid, if you want to die eating badly, go ahead, but don't try to change people's minds on science
