Nice recipe! 👍 While frying kaleji you can cover it with lid in between so that the kaleji don't lose its moister and remain soft from inside, this process won't allow kaleji to burn from outside as well. Love from India - Shef Vineet ❤️

Amna Mere bache thank you so much for this particular recipe because you know that kaleji especially when it is fried on the Tawa is one thing North Indians cannot do without . now one really amusing Tawa kaleji ka mazedar kissa suniye in the life and times of me my younger brother and cousins. I remember the first time I ate this particular dish when I was about seven years old early 1970 and was at my mausi's house Dilli visiting during the summer vacation from the south of India Hyderabad Secunderabad Jahan abbajan Ki posting hui thi. The male elders were doing gupshup, the ladies were doing the cooking and we children 4 of us were doing the serving like well brought up little children of our times and generation. My mausi handed me one plate and said go give it to your daddy and your uncles . Bas Phir kiya tha 1 piece khana Hi Tha aur uske baad Ek Aur piece aur uske baad Ek Aur piece and within 5 minutes Puri plate khatam ! I think I finished about hundred grams of Spiced delicious Tawa fry kaleji all by myself. Elders bahut Khafa ! you greedy little baccha. And I being a bit of an innocent and spoilt simpleton happened to say" Aap to yeh sab apne aap kha lete Hain Hum bacchon Ko To Kabhi mauka Nahi Milta k ise kha saken. " Everybody sun ke awaak! Pehle To Ek bache Ne adults Ke Samne Rubaru ho kar muh khola , dusra pata nahin kya bol Gaya! Actually the family was following the old British Riti riwaj of "Bachchon ko khana dinner dedo, snacks adults ke liye hain Jo British time se chal raha tha . Woh Bande bahut hi piyakkad they and they loved these sorts of small spicy snacks. jo unke Bawarchi banate the. Every evening drink party Chalti Thi in somebody's house or at Gymkhana Club. Apne Bande To piyakkad Nahin the paryah snack system lawn ke upar baith kar Independence ke baad bhi bahut chalta Raha in social families. Anyway, Nana ji wahan the aur Unki muh se colonel army style Mein Nikal Gaya , "Bloody hell, we are not the angrez kanjars . (Afsos ke saath yeh Kehna padta hai ki Kabhi Kabar Unki muh se ya 3 Galiyan nikal Jati Thin par Punjabi Army language main aisi language sab chalta hai) who don't bother about their children and forget all the responsibility by giving them in the hands of their Ayahs -feed the Chhota bachcha log their dinner and put them to bed while their mummy and papa get completely talli with the rest of their friends. bacchon ko Yahan Par Bulaiye aur unko Yeh snacks khillaiye. " Every elder of mausi generation decided ki yes Britishers toh chale gaye lekin Hum Unki rees karne Mein Koi kasar Nahi Chod rahe the. Aap Phir Samajh hi sakte hain Happy Ever which After means Hamein Yeh Tawa kaleji made by the ladies and fed to the children for the first time taste Karne Ko Mila! anyway thank you so much for the memory. Hamesha khush rahen muskurati Rahe and God bless you and your family. last minute really funny coincidence Aaj hi mein Bakre ki gurda kalejii Lene Gaya tha kyonki mera mann kar raha tha Ki Tawa fry ya barbecued kaleji banaun. Butcher ne very straight face Se Mujhe Kaha fresh Bakre ki kaleji sir, only 800 rupees kilo. Main bhai thehra Sidha Sada din bhar imaan ki khattne waala salaried Aadmi on Limited Aamdani and budget bus Choti Si Muskurahat Leke dukaan se bina kuch khareede bahar nikal Aaya. Lekin Bande isse 800rupees kilo Mein aaram se kha rahe hain. No wonder Hotel wale ek Chotisi plate 250 rupees spiced kaleji Tawa serve kar rahe hain. Ahh well!
