TARHANA SOUP: COOKING GUIDE FOR HOMEMADE TARHANA SOUP MIX

FULL RECIPE FOR THE TARHANA SOUP
Ingredients:
1 cup Tarhana (Homemade Soup Mix) *
8-9 cups water (based on your preference for the consistency) **
1/3 cup olive oil
1/3 cup pepper (or tomato) paste
1 tbsp salt
For the sauce (optional):
100 g butter
1 tbsp dry mint
8-10 spiced bread croton

(**) You can also use same amount of milk if you prefer a creamy taste
Directions:
Tarhana is a traditional soup-mix that is prepared in autumn when the vegetables mature with rich taste and lots of nutrition
Properly prepared Tarhana soup-mix can be stored for a couple of years and it makes the easiest nutrition-rich winter soup
PREPARATION
Soak 1 cup of Tarhana mix in 1 cup of drinking water for 10-12 minutes
Soaking will help to dissolve the dry mix and avoid getting lumps in the soup
(Although, you could add the dry mix directly into the pot as well)
COOKING
Pour 1/3 cup of olive oil into a deep pot
Add 1/3 cup of pepper paste and stir for 1-2 minutes on medium heat
Add the dissolved Tarhana mix and continue stirring
Add remaining 7 cups of drinking water and 1 tbsp of salt
Try eliminating the lumps by whisking or blending for a couple of minutes before the soup boils
Then, slowly stir the smooth mixture until it boils
Once the boiling begins, lower the heat to the minimum setting
Boil for 5 minutes and turn off the stove
MINT SAUCE
While the Tarhana Soup is simmering, prepare a mint sauce to enhance its flavour
Melt 100 g of butter in a saucepan and stir in 1 tbsp of dried mint
Immediately drizzle some of the sauce onto a plate or the pot of Tarhana
SERVING
Winter is a time for being home with warm, cozy, and charming gatherings
Tarhana soup is a spoonful of savour and nutrition, perfect for long and chill winter days and night
Serve it hot and plain…
Or increase the dose of satisfaction even more by adding mint sauce, croutons, or cream based on your mood

    I am wondering if you’ve had any success making homemade Tarhana in this climate in Ontario? I was told that to dry everything out that it’s not good here and I’d like to try it, but not if it’s impossible!

    Hi Samantha, I believe many people have similar concerns about the weather conditions in Canada😅. I was brave enough to try it, and it was very successful🙌. Tarhana needs only 1-2 days of sun. I made the tarhana in August, when the tomatoes and peppers were very cheap and tasty. 1-2 days of 25-30C temperature is enough to transform the wet dough into dust. Once it turns into dusty particles, you should air dry it inside. If you keep drying it under the sun, it will lose its colour which I love very much🤗. Summers in Ontario is warm enough that you can even make sun-cooked jams, marmelades, and pestils( fruit leather)! Thank you, this was a very good question!

    Ooops! you are right. Very sorry about this mistake. Please use 1 cup tarhana mix for 8-9 cups of liquid (water or milk). I am going to fix it. Thank you for letting me know. Sometimes, we blind for our writings. My apologies.

    There is also Angorra food market in Oakville! Cute little Turkish market that sells some nice products. They do sell tarhana, I’ve purchased from there before.

    You can use tomatopaste no need for pepperpaste (that’s usually what is used) More accessible and almost everyone has it in the kitchen. I also ad some garlic, mostly they do. Gives it a little more taste. And healthy also.

    Great choice👌. Sometimes I cook tarhana with milk no adding any tomato or tomato paste. Milky tarhana is creamy and softer taste especially as a quick breakfast in the winter😋.

    @Rada R Sorry being late, nowadays I am very busy with doing web page for fairies' Cuisine 😅. Milky Tarhana is very easy. Use same portions of tarhana mix-water ratio and use milk (or half milk-half water) instead of water. Just dissolve tarhana a bowl of drinking water. Pour the cold milk into the pot, add the dissolved tarhana. When it is start to boil, cook 5 more minutes. Naturally no need oil or butter (milk has it already). But if you prefer, you can add some butter as well. Milk gives a creamy and sweetish taste. So, that way tarhana becomes lighter in taste and richer in texture 👌.

    And i just put the mint in the soup at the end. Easier and not si greasy as with the butter.

    I mean no butter with mint.. I also like to use oil not butter in the beginning. 🌺 And i like it all year 😊

    As a paste, they seem similar. Only, pepper (hot or sweet) paste has a strong pepper taste and some flakes in it. You can use pepper paste or tomato paste based on your desire. I love strong (but sweet) pepper taste in this soup in the winter. On chilly spring days, I cook this soup mix only using some butter and milk instead of pepper paste and water. This choices are change the taste completely. I recommend try all seasonally.
