Today I am tender beef tongue tacos. I will chop and stew the beef tongue to create lengua entomatada. I recently traveled to San Antonio and tried lengua entomatoada at a local café. It was tender and flavorful. The meat was melt in your mouth tender stewed in a a rich tomato salsa.

INGREDIENTS
3 lbs beef tongue
1 Tbsp salt
2 dried bay leaves
1/2 tsp black peppercorns
5 to 6 cloves garlic
half of a large onion
3 1/2 quarts boiling water
SALSA
6 large Roma tomatoes
2 tomatillos
1 large jalapeno
1/4 large onion
5 cloves garlic
2 dried guajillo chiles
1 tsp ground cumin
2 tsp beef bouillon powder

I could watch tortillas puff up all day. I never knew when i left south texas that the thing id miss the most is a proper flour tortilla.
Lengua is my absolute favorite taco (when done right). I tell everyone it's like the most fabulous pot roast you've ever had, and the sauces you can put with it are endless. I prefer mine en salsa verde, or chile colorado.

The first time I ate beef tongue I didn't know what I was eating, they just told me to taste the green chili with meat. IT WAS DELICIOUS! They told me after what I was eating, but by that time I was hooked.

I have not had lengua in forever. We used to eat it all the time growing up. Must try but not tell my kids what it is 😂🤭🤗😁

Almadina Benavides we had a pot luck lunch where I work some years ago. Someone had brought some barbacoa, guacamole, and tortillas. One of my anglo coworkers asked what the barbacoa was made of, and I told him "Don't ask. It's good." Needless to say he hesitated to try it, but his curiosity got the better of him, and he tasted it. I meant the comment as a joke, but I'm glad he didn't take me seriously.

@ thank you so much for sharing this recipe. My mom used to make lengua for us when we were growing up, and I grew to love it. Which Tink A Taco restaurant did you eat at? I live down the street from a mexican restaurant in San Antonio Texas, and the food is great, but, unfortunately, they don't serve lengua. I lost my mother seven years ago, and seeing you prepare this dish brought some sweet memories. Again, thank you for sharing with us!

When was a kid my daddy used to make beef tongue. I promise you thought you were eating the most delicious roast beef sandwich!!! This brings such fond memories even though ours did not have salsa. He would just bake a fresh loaf of bread and we would eat like no tomorrow!! I’ll have to see if my husband would be willing to try this!!! I sure would be!!!

That's how my mom used to make them. She would cook it in a pressure cooker and serve the tacos just with cilantro, onion and salsa.

Yay, I love lengua tacos! I'm glad I tried them that first time. I was unsure about it but then when I tried it, it was sooo good.
I also grew up in Houston and went to san antonio on holidays !!
My mom made a beec tongue when I was a kid! I was so grossed out and fretted about it all day! I really didn't want to go home for dinner that evening! But reallyf had no choice! So I relented! When I walked thru the door it smelled odd but kind of like roast beef! When she served it it was all nicely sliced and looked surprisingly like roast beef! And tasted like it too! I was pleasantly surprised!! Would I eat it again?? Heck Yes!!😊😊
I love watching a videos as much as I can because you're from Texas and I'm from Texas and sometimes when I get home sick I just watch your videos and then I cook what you cook but anyway the cow tongue is the best thing you can make out of tacos I used to do it all the time they are so good I don't know what part of Texas behind the stockyards they have restaurants back if they make some badass tacos if you ever get a chance to go that way you should
Love lengua tacos! Now you have to do chicharron tacos, the kind that's cooked in the spicy red sauce.

It's ridiculously expensive. I bought mine at Alamo Farms here in San Antonio. It's a fresh meat market. You literally pick the animal you want and they will process it for you there on site. They also sell pkgd meats etc.

@...Yeah I remember when Lengua was practically a 'throw away' piece of meat that could be bought VERY cheaply, but I guess a lot of people have realized just how good it can be when done right and now the demand is higher, hence the outrageous price....
It be fun to have seen the reaction of the husband -he must be a pretty happy guy :)

Funny how some people just don't like it because it's the tongue but they like steak they like beef I think someone should do to those people what my mom had to do! she had to trick us into eating it when we were teenagers because we thought it was gross but once we ate some it was delicious!!! my mom prepared it's similar to how you made it. my mom called it lingua guisada! We ate it for dinner and then the next day she told us what it was! it was delicious and so tender and just great I mean people if they can trick them into tasting at the ones that don't want to try it they'll love it just got to give it a chance! the way you're cooking it oh my God looks good I'm going to try the recipe thank you!😊

Omg i rmemeber my husband's grandma making a tongue in the Crockpot and she told me it was ready. I wasn't aware she hadn't pulled off the membrane where the taste buds are....ugh peeling that thing off was gross. But then mmmmmm the reward of having lengua was well worth the disgust lol

Awesome, I just bought half a cow a couple months ago and told I'd take the organs, bones, and tongue. Now I know what to do with the tongue. Just regular tongue tacos are awesome but this looks even better.

We can honestly say that there is no waste in Mexican cooking. We use all the parts, including cabeza... And yes, lengua looks revolting, but it eats so good...

That looks amazing! I get tacos de lengua pretty often. At least once a week along with al pastor, chicharron, etc. from the place across the street. (a taqueria in a gas station. don't hate, lol) But i've never had lengua in a sauce. Looks a lot like a guisado de res or something. I haven't tried to cook lengua yet but I think I may have to make a trip by the mercado next week since I have to take a trip out that direction anyway. Might see if i can score a tongue and maybe some cheeks since i've never tried to make barbacoa either.

Tanka Taco at Culebra and Potranco is the best place for lengua tacos or Lengue Entomatada! It’s hard to find Mexican restaurants that have lengua tacos, and I can’t figure out why!
We also eat lengua in Turkey. In our cusine, it is served without salsa sauce. The boiling technique is same. After slicing lengua try with extra virgin olive oil and salt. It's a traditional mezze.
