When you use cream cheese or butter in baking, you have to let it come to about room temperature on the counter first. Starting with the hand mixer would've helped too. Good effort though, bro. Love it when you get in the kitchen. Reducing a lot more soda to a syrup would bump up the flavor.

You should try Costco in Canada. The food court there has many unique items.

Someone should try this again, but with that concentrate you suggested. All you'd need to do is run a tray full of baja blast in the oven at very low temperature for a few hours

U should've used more Baja blast, seemed you used the ice that melted with the soda and that's mostly water.

You should do a comparison when the official taco bell version drops.

You can cook the soda down to a syrup to make it more concentrated

Did you use the Baja blast slushy, or a thicker Baja blast like from their video?

You can make your own syrup if you really want to try to make pie again. 36 oz of bottled or can soda (fountain drink and slushy won't work) can be reduced down to 6oz of syrup. Takes 30 mins on stove medium/ high to do it. It's how my mom made soda flavored pies and cakes back in the day.

This probably tastes better if you use the Baja blast bottles rather than the Baja Blast from Taco Bell that's engineered to work with other food. While the bottle in a convenience store is meant to work on its own and has a stronger flavor.

True, boiling down the Baha blast until it is a small concetrate would be the way to get the taste, however it will most likley taste like shit in a dairy based recipe so that is why they did it this way probably.
